A friend shared some parsnips with us this week, which I have never cooked before.

Anyone have tried and true recipes?

I like to cut them up roast them in the oven with some olive oil and salt. Sometimes I'll mix cooked parsnips with cooked squash or you can add them to regular mashed potatoes.

I roast them as well- yum. I also scallop them with potatoes adn onions. Just make your favorite scalloped potato recipe and add sliced parsnips and some sauteed onions. Oh, my, it is delicious! Throwing a little grated cheddar cheese on top makes it even better.

Roasted parsnips are delicious. I love to put them in vegetable soup and in chicken soup, they add a lovely flavor.

I toss them in Olive oil salt & pepper & toss them on the bbq grill Yummy! They are good just sauted in butter on top of stove too with a sprinkling of nutmeg. Or cut like French fries and fried... be sure to salt them quickly when they come out of the fryer. Love them!

I just love parsnips. I usually just cook on top the stove and then add butter and salt and pepper. Yum!!!

I just cut them up into small pieces...put a little butter, salt, pepper and italian seasoning and baked them. YUMMY! We really liked them and will be hopefully be growing some this spring.

I peel them and cut them up in chunks...mix with sweet potatoes, carrots, squash, red bell pepper, onion, garlic, etc...toss with some olive oil, sea salt, coarse black pepper and roast in the oven at about 425 until lightly browned and tender. yumm.

I have NEVER eaten a parsnip! No one here grows them and they are not available at our grocery store. I saw several recipes on the Food Network using parsnips and I ask the produce man why we couldn't get parsnips. He said they were too expensive and that no one would buy them. A year or so later, there were parsnips in the produce at the store. Sure enough, they were too expensive. Can't remember now how much they were but way too expensive for me. I even bought seeds last year, thinking I would try to grow some. Well, either ran out of room or energy before I got them planted. I suppose the seeds are still good, will try again this spring. Anyone know of anything special about growing them?
