I've just started my first ever sourdough starter (on day 3 now), and wondered if someone might have some advice. I covered it with a cloth as suggested in Mary Jane's Idea Book, but each morning it has a hard brown crust on top that does not want to mix in. Is this mixutre too dry perhaps? Thanks for any help. Hi Catherine,
Yum... I love sourdough and have been making some too. I find that using a "damp cloth" as a cover works best. I try to keep the cloth damp.. see if that works for you. I would scoop of the hard crust and see if the damp towel slows that down... happy baking!

I started a "starter" also on New Year's Day. I found the recipe for sourdough bread from an octagenerian friend of mine who kept me in starter for years. Since he died a few years ago, I have really wished I could find his recipe, and lo and behold several days ago in a recipe clean-out, there it was! It's his bread recipe, but not the starter, so I'm doing that kind of blind, as he always provided that, but so far so good - I'm keeping it covered overnight with plastic wrap, then un-covered during the day. Today was day 4 and I really should have moved to the next step today, but didn't, so will do so tomorrow. Just can't wait for that delicious bread again! His recipe makes 3 loaves at a time, so it's great for friends...

Hi Everyone,
Thanks for joining in on this conversation with your tips/ideas. I found that using plastic wrap to loosely cover the starter is a must in my dry climate. I also added a couple more teaspoons of water just to get a consistency that was not so dry. Things seem to be going very well now and I'll try making bread tomorrow. Will be using Mary Jane's recipe and I'll post results here. Thanks!

I have the starter recipe but not the bread recipe. Maybe I should wait for the next MJF to get here to start the starter? I was cleaning out my recipe box a while ago and found the starter one.

2 cups All PF
3 Table. sugar
1 envelpoe yeast (I just have bulk yeast. How much is in an envelope?)
1/2 tsp. salt
2 cups warm water

In a pitcher or bowl,mix all ingrediants. Beat with a wooden spoon or whisktil smooth. The fermentation process will dissolve the small lumps. Cover with cloth. Set in a warm place away from drafts. Label and date. Allow to ferment 2-3 days. Stir twice a day.

So now I need the bread recipe and I can get started. Does this look at all like the recipe ya'll are using?

The recipe I have for sourdough starter is from MaryJane's Idea Book/Cook Book. It doesn't call for any yeast; just flour and water. I haven't looked to see if this recipe is on the MJF website somewhere. I don't know how it works to post copyrighted things from her book here.....?

One envelope of yeast is equiv. to 2 1/4 tsp. bulk yeast - or if using, 1 "cake" fresh yeast...

Wow, my sourdough bread turned out great...two beautilful loaves! I did use mostly white flour (ugh) for the additional flour, but figured it was ok for my first try. Next time I'll experiment with other flours. Thanks everyone for your helpful support! Looking forward to hearing more about this. Anyone up for trying the sourdough flapjacks and/or biscuits?

No sugar in true sourdough...or yeast. Thankfully don't see mention of amish or friendship starters here...that's a totally different type and not even close to sourdough.
Very good sourdough groups on Yahoo for those needing/wanting help or good tips and recipes.
