What are you all fixing for supper? Does anyone fix Amish style chicken and noodles with potatoes and carrots in it? They call it Chicken pot pie. That is how I have been fixing mine for several years. The kids love it. Left overs are great. Don't plan to cook again until Monday. Well I might bake something.

Belle,

I take a whole chicken, rinse it off, plop it into the slow cooker the night before and wake up to the wonderful aroma of cooked chicken in the morning. Later in the day I remove all the bones and icky stuff from the carcass and then take the broth and bring it to a boil. I love to make home made noodles. Then I add the noodles to the broth and cook them, return the chicken until it is hot. Spoon it into a bowl and yummo, chicken noodle soup--way better than Campbell's could ever come up with. Can make mashed potatoes and pour the soup over the top like gravy. It is delicious and really sticks to your ribs--among other parts. LOL

That does sound good for a cold day like it was today. We went out to lunch. My hubby and daughter went on a motorcycle toy run today and I met them at out favorite BBQ place in town. Had a loaded potato with pork. So good! And for dinner just had grilled cheese and tomato soup. I had to come up with soup quick b/c I don't keep canned soup. I had canned whole tomatoes I put in the food processor with some tomato juice and carrot juice with a little sucanot (sugar) and salt. It was pretty good.

Kris, I have been experimenting with tomato soup from canned tomatoes too. I usually can a lot of tomatoes but the last couple of years didn't have enough to can. The grocery has canned tomatoes on sale often and it is much cheaper than canned soup. And if you count the sodium and HFCS, you are a lot better off going with canned tomatoes and the food processor.

Betty, thanks for the idea for the chicken noodle soap in the slow cooker. Going to give it a try. Sounds to easy and so very good. Hubby LOVES homemade chicken and dumplings soap, so will plop in some dumplings at the last minute on this recipe.
