Does anyone have a molasses cookie recipe? I have one here but i find it sooo dry? Thanks Jo!

I like my mother's soft gingersnaps. I realize this is a contadiction in terms.

Would you like to see the recipe? If so, I can post it when I get home this evening.

I know I would love to see it!! I too have a great molasses cookie recipe but it's at home too!! I'll share it tomorrow!!

Tomorrow is always fresh with no mistakes in it.....unless they are spelling mistakes.

Here's the recipe I use! From Country Woman issue July/Aug. 1989

Soft Molasses Cookies

1/2 cup butter, softened
1/2 cup solid vegetable shortening (not margarine)
1 1/2 cups sugar
1/2 cup molasses
2 eggs, lightly beaten
4 cups flour
1/2 tsp. salt
2 1/4 tsp. baking soda
2 1/4 tsp. ground ginger
1 1/2 tsp. ground cloves
1 1/2 tsp. ground cinnamon

In a large mixing bowl, cream together butter, shortening and sugar until light-colored and fluffy. Beat in molasses and eggs; set mixture aside. In another large bowl, combine flour (no need to sift), salt, baking soda, ginger, cloves and cinnamon. Blend thoroughly with wire whisk. Gradually mix flour mixture into creamed ingredients until dough is blended and smooth. Roll dough into 1 1/2 inch balls. Dip tops in granulated sugar; place 2 1/2 inches apart on greased cookie sheet. Bake at 350°F for 11 minutes. Do not overbake. Cool on wire rack. Store in tightly covered container to maintain softness.
Yield: About 3 dozen cookies.

Margret - I've made a copy! Molasses cookies are my huband's favorite and it's about time I learned to make them. Thank you for the recipe! My mouth is watering already!

INGREDIENTS:
3/4 cup margarine, melted
1 cup white sugar
1 egg
1/4 cup molasses
2 cups all-purpose flour
2 teaspoons baking soda
1/2 teaspoon salt
1 teaspoon ground cinnamon
1/2 teaspoon ground cloves
1/2 teaspoon ground ginger
1/2 cup white sugar

DIRECTIONS:
In a medium bowl, mix together the melted margarine, 1 cup sugar, and egg until smooth. Stir in the molasses. Combine the flour, baking soda, salt, cinnamon, cloves, and ginger; blend into the molasses mixture. Cover, and chill dough for 1 hour.
Preheat oven to 375 degrees F (190 degrees C). Roll dough into walnut sized balls, and roll them in the remaining white sugar. Place cookies 2 inches apart onto ungreased baking sheets.
Bake for 8 to 10 minutes in the preheated oven, until tops are cracked. Cool on wire racks.

Enjoy!!

Did you notice the year? 1989! I've been subscribed longer than that. Have you been subscribed that long too!? I've kept TONS of great recipes from them over the years.
