Tonight we had Pork Fajitas!

We were going to have them last night but I neglected to read the part of the recipe that required them to marinade for 8-24 hours.

So tonight they got sauteed with onions and bell peppers. They were so good and filling. Normally I eat 2 burritos when we have tacos, and I only ate one Fajita tonight. I am still full 2 hours later so I think it will last me through the night.

Alee, that sounds so yummy!!! We had a pork stir fry 2 nights ago with cabbage, carrots etc., tonight everyone is gone except me - it's 11:30pm here in Michigan and I still haven't found the perfect thing to eat! I was going to make potato soup but somehow "life, chickens, horses and goats" took over and I never got anything made! I might be up cooking late tonight!!!

Thanks Alee, sounds good. I fixed pork chops last night. Cooked 4, grandson dropped by ate one so now just have one left. It is a nice thick boneless hunk of meat. I think I can thin slice it and cook up some onions and peppers (from the garden) and make a meal for Ole Ron and me. Did you add any condiments? What did you serve with them?

Well there was the onion and bell pepper in with the meat, and of course the warm tortillas fresh out of the oven. On the tortilla we put a dollop or two of sour cream. We didn't eat fruit with dinner that night because we have been eating a lot of dried mangoes.
