I made this tonight! It was very good!
Pound 4 chicken breasts to 1/8th thickness combine 2 tablespoon sugar with 1/4 teaspoon cinnamon, 1/8 teaspoon of both nutmeg and clove. Cut up 2 tart apples into thin slices Put sugar and apples into bag together and shake until coated Divide apples evenly onto one end of each chicken breast Roll like you do a tortilla leaving both ends open Pin with skewers or toothpicks.
Grill till juice is clear or sear in skillet on stove top and finish in a 350 degree oven until finished
Combine cold apple cider with 1 tablespoon cornstarch and cook on high until thick glaze is created. Pour over chicken breasts and serve.
This is a hearty and filling dinner. I pan sauteed some carrots in butter, then let the butter drain off before serving. The heat brought out the sweetness in the carrots but I didn't cook them too long to let them get soft. Sweet and crunchy!
that sounds delicious!! you just created my menu for tonight's dinner! (and it sounds fancy enough that i think i'll try it for the next time i have my brother and sister-in-law over for dinner, too!)

Oh YUM!!!! I have a box of apples ready to use, freeze...whatever I can think of doing with them - what a great recipe! I've made more applesause over the last month to feed an army!!!
I need more apple recipes before they all go bad in the box!!!

Melissa- Have you thought about canning apple pie filling? MaryJane has a fantastic recipe for it!
oh, just wanted to let you know that chicken rolled with apples was so good! i baked them in the oven, ....wasn't sure if they'd get dry on top so i put a little butter on the top and sprinkled a little cinnamon. wasn't sure how they'd come out with the cinnamon on top but they were delish! thanks for a great recipe and i'm gonna make them for my brother & sister-in-law!
