I use it in my spaghetti, jambalaya, chili. As far as recipes go, I dont actually have any, I just use it as a filler to cut down on so much other meat.

Dalyn, I use it in my meatloaf - 2 parts ground beef to 1 part italian sausage. It is really yummy, you can just sub it in to any meatloaf recipe. Also if you brown it you can use it as an italian soup starter with tomato sauce and tortellini, really good. Amy Grace

It will add flavor to just about any recipe using ground meat. Lucky you. If I had freezer room, I would buy 1/4 of my stepmom's grandson's steer. Any home grown meat, without all the "extra's" is good. My biggest drawback is the kid is such a total jerk, I'd think of him each time I ate the beef and that would ruin my meal. Laugh, but it's true. |

My favorite way of serving Italian sausage is frying up some peppers and onions and then cutting the sausages either in half or into slices or whatever you like and serving them with butter and Italian bread...this is how I grew up eating it.

Here it is:
1 & 1/2 lbs ground Italian Sausage (I used a mixture of mild and hot) 2 Tabspoon olive oil 1 large onion 2 green bell pepppers seeded and diced 2 garlic cloves, minced 1 quart homemadeor canned beef broth 4 cups freshed or canned chopped tomatoes 1/4 cup fresh parsley 2 tsp chopped fresh thyme or 1 tsp dried thyme 2 small zucchini, sliced (you could use green beans if your family doesn't like zucchini) 2 Tablespoons pesto salt and pepper to taste freshly grated parmesan cheese for serving
Cook sausage over med heat until browned. Remove from pan, drain and reserve. In stockpot add olive oil, garlic, onions, and bell pepper. Cook until tender, about 5 minutes.
Add stock, tomatos, sausage and 2 cups of water. Cover and simmer for 30.
Add parsley, thyme and zucchini and simmer, covered until the zucchini is tender, about 5 minutes.
Stir in the pesto, salt and pepper. Serve with parmesian cheese on top.
The next time I make this I may add a few cheese tortillini to the soup.

super simple and comforting, crumble the sausage, cook, then add sliced potatoes and tons of scliced onion and just cook up everything till the spuds and onions are nicely browned, don't forget s&p. add a salad and you have a rustic but yummy meal. since you are from central wash. as i am use up the last of the walla walla onions in this dish. this is a perfect opportunity to use a cast iron skillet!!! cathy |

Cathy, thanks! That sounds good too, and any chance to use the sweet onions... Right now we are all cozy, eating that yummy Italian Tortelli soup that Ms. Lilly posted. Quick, huh?! Rosemary bread to dip in, and we are all feeling fat and sassy. Cathy, where are you? I'm in Yakima.
