I am just getting ready to can about a bushel and a half of apples tonight. We cooked them all down this afternoon, then I went out and mowed a few hours, now to make dinner and then to can the yummy applesauce. A perfect chilly Northeast day in Pennsylvania. Anyone else doing the same??
This time the 3 girls (11, 9,and 6) and I are doing Cortland and Gala. I did some of those last week and they weren't as sweet as I had hoped, but still good. And I refuse to add sugar to my sauce--just won't do it. Next week I am going to do Yellow Delicious and Jonagold, which is a great no-sugar sauce. Anyone else have a favorite???
I will end up with about 24 quarts for $11.00-- they were all seconds, but I threw away almost nothing. We will proably do about 40+ quarts to get us through the winter. We love applesauce!
Blessings, Daniellle

It's cool weather here also in Missouri, and I have a bunch of apples that I'll be making up tomorrow into applesauce and my personal favorite apple butter.

I decided that applesauce will be my first canning experience. Friends have lent me all the supplies and I picked a ton of free apples off our tree at work! I hope to be able to share a success story soon!

I canned a bit last week (Golden Delicious) and am working on another 1/2 bushel this week. We don't have trees that will produce enough so we go to a local orchard and pick. They are divine and inexpensive. I can't justify doing too much though until the apples come from our own trees :). We have dehydrated several bushels of these apples also!! YUM!!!

I've got my apples cooking down as we speak for my applesauce. Going to put off on the apple butter since our church will be making apple butter later this month.

Apples are this weeks project. I picked up a box at the farmer's market yesterday. Once the company leaves from the Writing weekend, I'll jump on them. These are connie apples. I had never heard of them a cross from japan, i think he said. They are quite delicious.

I finally got the last of the Delicious tree picked. A neighbor came over and got to the top of the ladder and he got them all. I started on the Johnathan tree. The neighbor took home 3 walmart bags full. I still have a 5 gal bucket full. Think they will not get used up. I want to go on to working up the Johnathans. Got a new recipe from a neighbor for apple jam. It taste like apple pie filling. I have a box of "no sugar needed" pectin. Suppose I can use it and splenda? |

I'm looking to make applesauce today. (need a recipe) I put up 3 quarts of apple butter over the weekend. I couldn't find my lids for the small mouth jars so I could can pints.
Anyone want to share an applesauce recipe? I've never made it before and my girls really want to try today. Thanks!

I peel and core and cut up my apples, put them in a big pot with about two inches of water in the bottom and heat it up to steam the apples for about 15 to 20 minutes, then mush them up with a potato masher (wear a hot pad on your hand for this one!), mix in a bit of sugar (1 cup or so?) and some cinnamon and cloves. My family likes it SUPER chunky, so we do it that way. I really think the sugar enhances the flavor as well, so I don't leave it out.
This year I made so much applesauce that I tried some new variations--I made a couple of batches with some grape juice added--the kiddos (and my husband!) loved it as well.
Oh yeah, can it in boiling water canner for 20 mins or so.

Anyone have the applebutter recipe without using sugar? You have all made me hungry for applesauce. Guess I will hunt up some apples. They are so expensive but it's cheaper than buying the sauce.

Hey Karen, ask your orchard for seconds. They're usually half the price and great for applesauce, just scabby skin or asymmetrical or something. |

I don't put any sugar in my applesauce just cook, mash, and can. yummy. For apple butter it's the same except I run it through the blender to really smooth it out.
I'm needing a good apple pie filling recipe to can if anyone has one?
