Ok Erin here is the one that I use. It is really more of a cake or cupcake recipe but I use it for quick breads by adding 1 tablespoon of baking powder. I figured I will share it anyways. It is one that I have tweaked and messed with. I am not a great giver of directions but I think you will get the jist of it.

Basic Cake

2 1/2 cups flour
1 Tablespoon baking soda
1 pinch of salt
1/2 cup butter
1 cup granulated sugar
3/4 cup brown sugar
2 eggs at room temp.
2/3 cup buttermilk

you choose flavor of either pumpkin (my favorite) or banana.
**for pumpkin add 1 can of pumpkin puree, and enough of your favorite pumpkin pie spices to flavor. I taste mine to see if I have enough spice.
**for banana just add 4 mashed bananas, 1/4-1/2 cups walnuts

Optional ~ 1/2 cup chocolate chips

Preheat oven to 350 degrees. Grease and flour your pan(s) or muffin tins.
In a bowl mix together the flour, salt and baking soda. (The baking powder as well if you are using.)

In a large bowl cream your butter and sugars until they are fluffy. Then add the eggs one at a time until they are incooprorated. Mix in either the pumpkin and spices or bananas. Once those are mixed then you will start adding the flour mix and buttermilk. You will want to alternate when mixing these in. Stir in the walnuts and/or chocolate chips if you are using them.

I know ovens vary so for me it takes 20 minutes when making cupcakes or muffins. Two 8 inch rounds take me about 30 minutes and a 9x13 pan about 40 minutes.

I don't always frost mine but if you are so inclinded this recipe taste great with cream cheese frosting!

My favorite is the old Libby's recipe, tweaked a bit:

2 c. all purpose flour
2 tsp baking powder
1/2 tsp baking soda
1 tsp cinnamon
1/8 tsp nutmeg
1/8 tsp ground cloves
1 1/2 cups pumpkin puree
1/2 c. sugar
1/2 c. packed brown sugar
1/2 c. evaporated milk
1 egg, slightly beaten
1 T. vegetable oil
1/4 c chopped nuts
1/2 c. dried cranberries /or/ 1 c. fresh cranberries. If using fresh, reduce pumpkin by 1/4 cup or bread will be too wet.

Preheat oven to 350. Grease 9 x 5 loaf pan.
Combine flour through cloves in small bowl. Combine pumpkin through oil in large bowl; stir in flour mixture just until moistened. Fold in nuts and cranberries.
Bake for 60 to 65 minutes or until wooden toothpick comes out clean. Cool in pan 10 minutes, then remove to wire rack to cool completely.
Supposedly makes 16 slices, but I've never gotten close to that many!
