Um, I'm in the middle of making dinner. A new recipe. Its calls for eggplant. Do I peel it or just slice it? Anyone....? Anyone....? Thnx!

You can do both...I usually peel it though.

I think I read that you only need to peel the older ones. I made some parmesan a couple of weeks ago and had some young eggplants and one older one. I didn't peel any and I could tell the difference when I had a bite with the old plant.
