I do not know how to can. I came inot a bunch of jars that look pretty grimey. I washed them twice and they still look funky. So once I get them clean (suggestions?), whats the first step from there? Can I even use these jars?? I know how to make the recipes, but am clueless about the boiling jar part. Any tips?

I wash my jars in the dishwasher. Not my dishes, just jars. Other than getting them clean, you need to check to make sure there are no nicks around the rim. If so, they will not seal. You need a good canning book. Ball has a good one. Some things can be canned in a boiling water bath, some needs to be pressured. You also might check with your county extension agent. They probably have some lititure.

Dawn, after I wash my jars and check them for nicks around the rim, I sterilize them in my canning pot with steam. I put the jars in upside down in the rack with enough water just so it doesn't touch the jars. Once it starts boiling, I steam them for 20 minutes. I can then remove those jars and put in the next batch of jars without having to wait for the water to boil again. I can do 3 batches of jars (my canner holds 6) before I have to add more water. It's important not to let it boil dry or you can damage your canner.

A good canning book is essential. Ball or Kerr both produce good ones. Fruit and tomato products are canned in a boiling water bath. Meats and veggies in a pressure canner. If you get a canning book (or booklet) it will walk you through every step.
