OHH Heather...I do have a coupla Apple recipes that I LOVE. Gotta run some errands now but will return later and add one of my FAVS! and I love the lovely photo! Do you like cake or pie cause I have a few of each I do so Like that are great Apple usuage!!!

Heather, I tried to leave my recipe at your blog, but didn't work so here it is:
I like stuffed apples, bake in the oven, with something yummy like pork chops.
I core the apple, throwing away the seeds and chewy icky middle stuff, then scoop out the rest of the apple and place in a separate bowl with a little lemon juice. I add brown sugar (I like dark), maple syrup, cubed stuffing, nutmeg, cinnamon, and golden raisins, then stuff all of that back into the apples.
Bake at 350 degrees, covered, in a glass dish with a little water in the bottom. It steams them and keeps them from drying out. The last 5 minutes, top with a nice chunk of mellow cheese and melt. Oh boy!! Yummy!!! I could eat several of these for dinner.
