Does anyone know of any way to preserve zuccini, I'm wondering if it would freeze, can, or store well in a sellar? Zuccini is obviously the first choice but are there any other ideas?

Last year I shredded my zuccini and put a cup in each freezed bag and that way I had it fresh to make bread and muffins. It worked quite good. Love and peace Mary |

I shred mine and put into baggies containing 2 cups each, and I also dry mine for use in soup during the winter.

I canned mine last year. I cut it into cubes then processed it in the pressure cooker forever...no actually I think it was 90 minutes. It came out really soft but I find it a great vege soup base! A grower at the Market told me to freeze it, but to freeze twice the amount I need because of the shrinkage. I'm about ready to try that because, they are coming out my ears :)!!

I am not fond of freezing shreaded Z. This year, for the first time, don't know how it will work out, I put the Z in the blender. I then froze the liquid. Will make something with it later. Or it might just stay in the freezer with the blender spinach to keep it company. I do make lots of bread and fritters and freeze them. They seem to hold up better than freezing raw Z. |

My favorite it to can it. I make Italian Zucchini by cutting the zucchini into cubes and placing it in a large bowl. I then add crushed tomatoes and chopped onions. Add Italian seasoning mix or oregano, rosemary, garlic, salt, etc. Mix well, pack into jars, add liquid, and seal. I have used both water and tomatoe juice as the liquid. Either way is good. My family loves it and when I have a bad year for tomatoes, I buy canned tomatoes so we can have this during the next year. |

I love having frozen shredded zucchini on hand to put in breads, casseroles, etc. Last year, in an effort to use up my abundant garden supply of zucchini, I made canned Zucchini Relish (like sweet pickle relish). It turned out very good, and we enjoy it! And don't forget, while the zucchini is fresh, you can make things like zucchini boats/stuffed zucchini. |

I usually shred several of them and freeze them in 2cup amounts in baggies for use as bread later. I have canned them in lemon juice to use for mock apple crisp, sweet pickled spears and this year I'm making a ton of them as dried salt & vinegar chips. I love them as a snack after another farmgirl here turned me on to them! I might do that Italian zucchini this year, too. That just sounds wonderful, Shirley.

I like to cut the zucchini into small cubes and freeze in small portions. It's so handy to take out a bag from the freezer and throw directly into a steamer basket for a quick veggie, especially as part of a quick lunch for my toddlers. |
