any suggestions as to what to serve with the corn?? Any ideas for finger foods that guests can snack at before the main meal would be appreciated!

Every one in Kansas, always liked pickles. Pickled anything, okra, zucchini, cauliflower, green beans, carrots etc.

Deviled eggs, are always a favorite as well.

One of my favorite things to eat with roasted sweet corn are jalapeno's stuffed with cream cheese and wrapped in bacon and cooked on the grill. Something about the spicy pepper and sweet corn tickles my taste buds. Then I like to top it off with a nice summer punch or sweet tea. I love corn all on its own.

A family friend used to do a "corn roast" each year when i was growing up and all her family served was corn. Corn plainly roasted, corn pudding (which I still make for my family), corn bread, corn fritters...You get the idea. This is the one time of year that corn is at its peak and shines all by itself. Often times when I have friends over I will make special butter blends for folks to put on the hot corn on the cob!

A corn roast!!! Suzanne, I want to come!! What I would do, is set up a salad bar. A big bowl of lettuce and small individual bowls of veggies. Let every one build their own salad. Or they could just eat the veggies as finger food. I do this a lot for family dinners. One says they don't like mushrooms, another don't like radishes and so on. This way they can take just what they like.

How bout dips and crackers, or a relish tray? I've got a few dip mixes from Tastefully Simple.. One a spinish/dill dip. Also I make a beef and cream cheese dip with green onions and seasoning. Lay out a platter of crackers and there ya go.

The salad bar sounds like a good idea too!

Just had another idea. Have a Native American theme dinner. Serve the 3 sisters, Corn, beans and squash. Fix a big pot of beans and roast the squash with the corn. Have little kids comming? Make head bands with colored paper, then stick a feather in it. Wouldn't that be fun? I think I'll do that and I don't even have any corn. Can't invite Alee, she dosen't have any squash. LOL

Brownies would be all I'd want! LOL Or, chunks of cheeses, little meatballs cooks in a sauce, or tuna or shrimp salad sandwiches cut into four small squares.

Thanks, Marly, we will. It is a celebration of all the summer birthdays in the family, we are having it at my parents place in Western PA. That's where all the relatives converge from far and wide for all the holidays and celebrations (always looking for a reason, not that one is necessary!). We will probably have 40-50 people. I really like your suggestion of little meatballs, I hadn't thought of that one!
