Doug and I are winding down from out day. We didn't really have an official dinner. It's summer and hot outside which sort of kills our appetite. Nora had dinner and went to bed and sure enough- several hours later...we are hungry!
I looked at Doug and said "You know what sounds good? A Hard boiled egg sounds so good right now!"
He looked back at me and said "You are right! That does sound good!"
So right now I am hard boiling some eggs per MaryJane's instructions (found in her Magazine "The Art of the Egg"). I can't wait! 2 more minutes to eggy goodness!

OK..so I ordered the back issues but they haven't arrived....so how does MJ cook an egg? |

I LOVE boiled eggs! It's the only way I eat them. My youngest son, too!

Cover eggs with cool water, bring to boil, as soon as it boils, drop to a simmer for 5 minutes and then run cold water over them immediately. No black ring, the yolks are cooked but creamy, and the whites aren't rubber!

I love boiled eggs too. There are so many ways to use them. I boil a half dozen at a time and keep them in the fridge. I always keep a dozen on the bottom shelf of the shop fridge (so they won't get sold) letting them get old enough to boil. Think that is what I'll have for breadfast. Yum. |

They are so good, and Nora just gobbles them down! We boiled 7 last night. Doug ate four and I had 3! He claimed they "Couldn't have been more perfectly cooked"

Alee: I love eggs, especially in the morning. When I have rice & gravy leftovers, I like to fry an egg and put it on top of the rice, stir up, then eat. Super good! Marly |

My chickens give us more eggs than we use. I keep a boiled dozen in the refrigerator because my husband loves to eat one (or two) as a snack when he comes in from work. We love deviled eggs and this may sound crazy, but we used to play bridge every week and our favorite midgame snack was deviled eggs and a bowl of popcorn. |

AngiKay- I was boiling a bunch more the other day and forgot about them. They got seriously overdone! UGH! I couldn't even hardly stand to eat them. I am so spoiled with good hard boiled eggs now!
