So we have these big zucchini's and yellow squash that were given to us.. My kiddos don't like many cooked veggies so I hide them.. we even put the squash and zucchini in smoothies with success.. but everyone wanted pancakes this morning. So I took a huge zucchini and a huge squash. I peeled them, chopped them and pureed in blender with some water. I also pureed a bunch of bananas. This was the base for the pancakes. I used a pancake mix- krustex (I know I am spelling this wrong) I keep some on hand for this- when I order next from the co-op I will order their whole grain pancake mix. I had a ton of puree. I like to make extra pancakes for snacking later.. I mean if you already making a bunch of pancakes ( I would say it takes about 60 pancakes to feed this bunch!) then you might as well make extras for later.
So I poured half of the puree into my biggest bowl- added a couple of eggs and a bunch of pancake mix.. added a generous amount of pumpkin pie spice. Then I repeated for other half. The kiddos loved it, so did hubby.. I even had a few and they were tasty. A great way to get in a ton of veggies..
I made some homemade blueberry syrup to go on top.. they were good..

Debra....sounds like a great idea! I have a bunch of produce sitting on my counter right now! Can you puree and then freeze the puree for later? Also...homemade blueberry syrup...ahhhh....sounds yummy! I planted 2 blueberrry bushes this Spring but nothing yet! Maybe next year... I visited your "vintage home"....are those pictures at the top really your home? It is beautiful! And your family is so sweet....you have your hands full! I had 4 boys and 1 girl and they are all grown now but WOW what a ride that was....it goes fast because you are SO busy but what memories! Now they have children of their own....that's fun to see! I'll have to check your other websites later as I REALLY need to get off this computer and get some work done! Thanks for the visit! and the great ideas!

yes I don't see why you couldn't puree them know for later.
The pictures at the top are from my home and from my mil's.. the towels hanging isn't mine though.. I do just love that one!!
