CABIN CREEK FARM - KENTUCKY

'HOE CAKE'

TWO CUPS INDIAN (CORNMEAL)
ONE CUP WHEAT;
ONE CUP GOOD EGGS THAT YOU CAN EAT.
ONE-HALF CUP MOLASSES TOO,
ONE BIG SPOON SUGAR ADDED THERETO;
SALT AND SODA, EACH A SMALL SPOON.
MIX UP QUICKLY AND BAKE IT SOON.

for Johnny (or Journey) cake:
Make a thick mush, add a pinch of salt, make into small cakes and bake on a greased pan until browned.

HOE CAKE ... us the 'rhyme' ingredients above .. add a little butter and cook on a clean, greased 'hoe' over hot coals ... (or .. you could always use a hot oven).

HUNTER'S CAKE:
Make as Hoe Cake and add a pinch of baking soda. Bake on a board near the fire.

ASH CAKE:
2 cups cornmeal
1 cup buttermilk
3/4 tsp. soda
1/3 cup butter
1 tsp. salt
Clear a spot out of the ashes in the fireplace, drop batter onto the hearth. When the dough forms a crust, cover with ashes and hot coals. Bake until done through .. about 15 - 20 minutes.

FOOD INSULTS:
He's small potatoes and few to the hill.
He's all vine and no taters!
He flies arounda like parched pea in a hot skillet.
He's helpless as spilled beans on the floor.



BEAN SOUP
Two 1-piound bags frozen limas
1 medium potato, peeled and diced
1 onion, chopped
2 cloves garlic, chopped
1 carrot, chopped
1/2 cup chopped, baked country ham
8 cups chicken stock
1/2 teaspoon salt
1/2 teaspoon freshly-ground pepper
1 tablespoon fresh thyme leaves
1/2 cup heavy cream

Combine all of the ingredients, except the cream, in a large stockpot. Cook over a medium heat until the vegetables are fork tender. Add the heavy cream; heat but do not boil.

Get yourself a coupla' of them thar 'hoe cakes', a big 'ole soup spoon .. put on some 'fiddlin' music .. and ENJOY!

HOW TO COOK A COUNTRY HAM

SAW OFF THE HOCK END THEN BACK IT UP TO THE HAM PROPER.

WASH HAM THOROUGHLY AND SOAK IN COLD WATER OVERNIGHT.

POUR OFF WATER AND RECOVER HAM WITH FRESH COLD WATER.

PLACE ON STOVE AND LET COME TO A BOIL, THEN BOIL 15 MINUTES TO THE POUND .

REMOVE FROM STOVE, TAKE OUT OF WATER AND LET COOL.

REMOVE SKIN. PAT OVER FAT SIDE A MIXTUE OF 1/2 CUP SOUTHERN CORN MEAL AND 1/2 CUP BROWN SUGAR. WITH FAT SIDE UP OPUT INTO 400 DEGREE OVEN FOR APPROXIMATLEY 45 MINUTES OR UNTIL BROWN ON TOP.
