Ok, confession here. I've never made Canadian Bacon - ever. A friend gave me A LOT of it.

I just brought home the biggest, juiciest tomato ever! What do you think? BLT's? Can I do that with Canadian Bacon?

What else can I make with this stuff? I have some that is sliced already and a great big... roll (?) of it.

Think of Canadian bacon like ham. BLT's would great or a nice Canadian bacon and Cheese sandwich. You could chop it up and put it on a salad or add it to a cold pasta salad. Sounds yummy!

Yep! Just fry it up in a pan and use it like you would ham or bacon. I use it in "MegMcmuffins" (english muffin, cheese and egg), makes great sandwiches/bun-wiches too. If you can't use all that bacon up, you can freeze the roll.

Try searching for recipes for back bacon, or peameal bacon - that's what we call it in Canada :)

Alright! I made it last night. My first batch I fried it like crazy. It didn't fry like bacon. It was too tough to put in my BLT's. My hubby loved snacking on it, so not all was lost. Next batch I just warmed it. Everyone loved it! Especially with that big ole tomato we picked up from the farmers market. Yummy!

I'm going to pick up some english muffins today. I think those would be a big hit. I have a recipe for a ham & broccoli casserole - I'll sub the Canadian bacon for the ham.
