I just posted two really Awesome recipes on my blog. The first is Fish Tacos (come on give it a try!) and the second is chicken enchiladas with Tomatillo sauce. I developed the second recipe after the really great enchiladas I had in San Antonio. It was really close and VERY good!
Fish Tacos are AWESOME.. I was a little squeemish at first, til my husband made me try them and now I LOVE LOVE them ... everyone should try them once.. lol

Fish tacos are wonderful. Love'em! Will check out your enchilada recipe, too.
Spouse is learning how to make home-made corn tortillas. I've got my eye out for an inexpensive press... man oh man, nothing comes close to home-made tortillas!
Those recipes look so tasty, Julie! Yum! And I love reading your blog, BTW....such fun stuff there. Thanks for sharing. I added the enchiladas to my week's menu. ;)
