I meant to post on this a few days ago - but I had these beautiful fresh blackberries and I wanted to try something besides cobbler or jam. So I found a recipe for blackberry pudding - to tell ya the truth - it's almost like cobbler with a lil' bit of a different spin on it. But it's sooooooo good. Thought I'd share it with ya - anybody else got any great blackberry recipes? You will have to scroll down a lil' bit on my blog - should be at the bottom of the page. Enjoy! Cathy Cobblestone

Sounds yummy, every year when our wild blackberries ripen we pick them and make Blackberry Ice Cream. It is absolutly devine!

Blackberry Ice Cream

4 cups blackberries
1 cup granulated sugar
2 cups half & half
2 teaspoons vanilla

Puree blackberries in a food processor or blender. Strain to remove seeds (this will equal about 2 cups puree), stir in sugar, half & half and vanilla and chill. Transfer to ice cream maker and process.

That sounds really good, Cathy--
Is it like a "british" pudding where it's more cakelike, but moist?

We're making cordial this year with our blackberries. I'm VERY excited about that :) I usually make jam and depending on the crop may still, but right now, I'm devoted to the cordial (some for us, some for Christmas gifts)

Thanks, Cathy...I was sortof surprised, myself. My husband ran in when I said, "Oh my!"...I was just reading it like it was another "something" and then I thought, "hey, those words are REALLY familiar!"

Will you post the blackberry pudding recipe when you have the time? We've got extra :)

hey sweetie pie .. your 'puddin' sounds so yummy! i think maybe even 'i' can fix it .. will TRY to not BURN it!

however did i miss this issue of STL mag? isn't it wonderful! (i was probably havin' grandbabies at the time it came out!) .. will spend some time this evening reading every word! LOVE both the 'window house' AND the chandelier!

started to stop by today when i went to town .. but i spent a few HOT hours at GS . and was WILTED when i finished pushin' and shovin' treasures! had to run to campbellsville to get some deep forest green paint for our 'window frames'! freedom valley is lookin' wonderfully 'yellow' with all the sunflowers and black eyed susans poppin' now!

come visit .. i sure hope i can bring all the gurlfrenz to visit cobblestone farms when they come in october. WHEN is your autumn 'open house' this year? hope you can play hookey on saturday and join us at kathy's and luna's! bring your sweet mom and all your womenfolk kith and kin too!!!!

it was GRANDE spending the day yesterday with peaches and mimi yesterday .. .had to catch up with all the 'town gossip'!!!

Jonni - here's the recipe for the blackberry pudding you wanted -

Here's all the "must knows" and "how tos"...

1/3 cup margarine
2 cups sugar
1 cup milk
2 cups flour, sifted
1 teaspoon salt
2 teaspoons baking powder
2 cups blackberries

Cream the margarine and 1 cup of the sugar in a mixing bowl until light and fluffy. Add the milk and a mixture of the flour, salt and baking powder, mix well. Pour into a buttered 3-quart baking pan. Layer the blackberries over the top. Drizzle a mixture of 2 cups boiling water and the remaining 1 cup sugar over the blackberries. Bake at 350 degrees for about 50 minutes or until top is golden brown. Yield: at least 12 servings.

One of our family favorites is Blackberry Crisp

Just use your favorite Apple Crisp recipe & substitute blackberries for apple & leave out the spices.

YummY!

Went to the farmer's market yesterday and got blackberries so I could try this. Made it last night and we are really enjoying it with milk and sugar on. I know what my late night snack will be tonight!
