Does anyone know of a site we can go to for herbal equivalencies. Example: I have several recipes calling for dill heads, but I have dill weed and dill seeds. I do not know how much to substitute. Do I mix weed and seed to create heads? If so, how much weed and seed equal 1 head?

Hi Shirley, I've never heard of a herbal equivalency website (maybe someone needs to make one?! ;) but, maybe you could tell me what your recipe is and maybe I could help you figure out which one they might mean?

Ok I did a little research and found a website called www.homecanning.com the pickling recipe on there calls for 4 to 5 heads of dill, or 3 T. seeds or weed. Depending on your recipe I would just pick which ever you like better. As for the amount just guess-timate, as far as I am concerned you can't get enough crammed into one recipe right??? :D I hope I helped and didn't confuse you even more!

I found the equivalencies in a glossary. If anyone else is interested - 1 head of fresh dill = 1-2 tsp (5-10 mL) dill seed or 2 tsp (10 mL) dried dillweed. Also, in case anyone is wondering - I have several recipes calling for ClearJel, but it is not to be found in our area. I did some research and finally found that 1 Tbsp cornstarch = 1-1/2 Tbsp "Instant" ClearJel or 2 Tbsp flour or tapioca = 1 Tbsp "Instant" ClearJel. My recipes call for the powdered ClearJel. Does anyone know that equivalency? Example: 2 C + 2 T ClearJel for a peach pie filling. That much cornstarch sounds like way too much.
