Hi Everyone, First, gotta say, I miss you! My cell phone gets internet here in Ireland but the phone version of MJF is too simple for me to really enjoy as I would at home. I am catching up today because I am using the school PC to write this. I am studying at the Ballymaloe Cookery school and am loving every minute. We cook in the mornings and watch demos all afternoon and eat what we make for lunch and what is demonstrated for dinner so I am FULL! Even though the school is a full 8 hours or more, because The sun is up till almost 11pm and comes up around 4:30 am, I have lots of daylight in which to wander about the farm, play with the cows, pigs, chickens and pester the gardeners. info about ballymaloe cookery school can be found on the web with a sections of pictures and loads of recipes http://www.cookingisfun.ie I purchased local stone ground oats and have made myself the best oatmeal of my entire life. the brand is named for the town the stone mill is in - Macroom and i am going to be bring some home even though the airlines will be charging me for the added weight. It sounds like a lovely time you are having. And all that good food. Steel cut oats are definitely the best thing for breakfast in the winter. I know we will enjoy pictures of your adventures when you come home.

What a wonderful time you must be having. Savor every minute. It is so sweet of you to take time to let us know what is going on. The farm sounds like a lot of fun. Not to mention all that delicious food! I am so looking forward to pictures of the countryside.Have fun!

I have been looking at some of the pics of the farm there. It looks so beautiful! What a treat.

I have always wanted to go to that school. I have their baking/cookbook from a trip we took to Ireland in 2002 and use it a lot. Glad you're having fun and learning a lot.

Howdy FarmGirls! The Macroom oats I am making & eating are toasted and then ground in a stone mill, as opposed to steel cut ones which aren't toasted or ground, Mccanns just chopped. So, to make your own I would/will take Mccanns steel cut oats and lightly toast them in a dry pan and then grind them in a wheat grinder coarsely. here's the recipe (this is the recipe on the Macroom bag) 1/2 a teacup full of oats and 2 1/2 teacups full of water and a pinch of salt in a saucepan. bring all to the boil and reduce heat to a simmer and cook 5 minutes. serve with fresh butter and milk... I'm using irish butter and farm fresh milk (my milk has to be pasturised by irish law but the irish families here on the farm keep some unpasturised aside and drink and use that. Lisa, I can translate the Irish terms and Ingredients for you. they have given me a translation sheet. Believe me I need it... And here I thought they spoke english here. Silly Me! I love love love the sugar in Ireland...brought a bag home in my suitcase when I visited there. I haven't been able to find anything like it here. I ate a wonderful pork sandwich in a pub in Macroom (the town)...you made me think of it with the oats.

Karen- How will you ever get on the plane to come home? Your pictures are beautiful and it sounds like you are having just the best time ever. I am going to toast some of my oats and make Irish oatmeal for breakfast tomorrow. Yummy, yummy. Have fun!!

Update: Hello from ~All-American England In Ireland! -I am just finishing up my first week of actual cooking school. the first 2 1/2 days was a fast fresh food course and I baked scones, made rack of lamb, with mint chutney and lots lots more. the last 2 1/2 days has been Sustainable Seafood and I learned to cut up differing types of fish. I made Ballycotton fish pie, and haddock in bay leaf cream with duchess potato, mussels provencal and lots of sauces like homemade mayo, tarter, etc... am tired but happy. Tommorrow & Sunday, my Mother and I will have the weekend off from school and tour around Cork & Kilkenny. Then Monday we are back in school...Love, karen

FYI - I have put up a couple more pictures and a new report from Ireland on my blog. I made up a dish the other evening with those oats i was telling you about... i call it RisOATo! I make the amount of oats & liquid like the macroom package says, but use a risotto method with some milk instead of all the water. RisOATo is my new favorite food! really delish.
