Two days ago I froze 10 baggies of diced rhubarb, with 2 cups in each. Yesterday I picked some mulberries and froze 2 baggies. I got one of those vacuum things that sucks the air out and I really liked it. The baggies take up less space and stack very nicely. My parents have a bunch of mulberry trees that I can pick too. It'll be nice in the winter to thaw a baggie of rhubarb or mulberries. Anyone else like freezing?

| So, what do you make with your mulberries? Mostly I've regarded them as a nuisance but the other day my husband said he popped one in his mouth and it was quite tasty. Who knew? When we lived in town we had a huge mulberry tree by our garage which deposited gunk all over the garage and cars and the driveway. The funny part is that the berries on the warm driveway would ferment and the robins would gulp them down and then stagger all over the place. I don't know if they were sick or drunk but it was quite entertaining! But at this house out in the country the mulberry trees are out of the way and I didn't think of making anything with them. We've been picking blackberries in the woods like crazy. I, too, have a vacuum packer and like it for baked goods. It's a great way to preserve cookies IF you freeze the cookies first - otherwise they crush. We used it often for our son when he was in Iraq. Anyway, I'd love to hear how you use the mulberries! |

We have plans to make mulberry jelly this year. Does anyone have the white mulberries? we do and they are real sweet.

I love freezing our rhubarb and strawberries! I always clean and dice everything up and then freeze them on a baking sheet that is covered with a tea towel. Once they are par frozen I vacumm seal them into serving or baking sized portions. That way they, the strawberries, don't get mushed in the bag. I also freeze shredded zuchinni for bread.

I have been meaning to get one of those things. It is nice to do your produce and fruits then fix em in the winter reminds you of summer Pinkroses

I just made mulberry freezer jam, and it's literally the best jam I've ever had! Why doesn't everyone use mulberries? I was always told that they were no good for anything!

I just followed the recipe on the box of pectin for raspberry freezer jam, plus I added about 1/4 tsp of shredded lemon rind. It's delicious and a gorgeous reddish-purple color to boot!

Christina, when you freeze things on the sheet before you put them in the bag, do they freeze together solid once they've been in the bag? Or do they stay seperated a bit more? That's one of my pet peeves with frozen foods...reaching into the freezer for a bag of something and coming out with a brick of mushed, solid fruit.

Thanks, Denise! I do know where some white mulberry trees are, but I checked them out and didn't find any berries on them. Don't know if the birds got them or what. I do love white mulberries- they are much sweeter and juicier than black, plus your fingers don't get as stained!
