Yesterday Horseyrider had asked about flour mills. I gave my input for what I have and also stated that I am fairly new to milling myself. I have made a few loaves of bread and a banana snack cake. I also know that working with freshly ground flour is much different than the store flour. My questions are: What do you use to help get the fluffy loaves- lecitin, xanthan gum? Where do get your recipes? Does anyone have a recipe for bread that is a great everyday sandwich bread if so can you share with me? Thanks.
I use prairie gold wheat and grind it on the finest setting on my mill, and my bread turns out nice and fluffy. If I want it even fluffier, I use just a cup or two of white flour. I use freshly ground flour for everything except biscuits and some cakes...I like ww biscuits but dh doesn't.
