So I have a huge rhubarb plant in my backyard. So far I have made cake and cupcakes with it.
How do I go about freezing it? Any suggestions for freezing and what else I can make with it, besides jam and pie?

I think it would be kinda hard to freez rhubarb by its self. I suggest making pie's and frezzing them instead of baking them right away... Kristy

I wash, and cut up the rhubarb, put in bags and freeze. Simple and quick.

I wash the rhubarb, dry it, cut it up and put it on a cookie sheet to freeze, then put in bags, but if Michele's method works (and why wouldn't it?) that will save me a step this year. It is perfectly fine then for cakes, pies, etc. Have fun!

Kristy! Where have you been?

Thanks guys for your suggestions, I just dont want any to go to waste. I wish I could mail it out, but I dont know how that would work. I would give it away, but all my neighbors have their own plants,lol. SO I think I will make 2 batches of cupcakes, and try freezing the rest, cause their are actually 3 plants out there, 2 small ones and 1 BIG one.

Ooh! I'm green with envy, Amanda. I haven't had rhubard in ages.Mom used to make a killer strawberry rhubarb pie, but has since given up the canning process...oh for days gone by...lol

I found a cookbook that says you can just wash and freeze the stalks whole too if you want to save time, just cut off the bottom end and leaf and use a freezer bag.
Our rhubarb still hasn't matured!! Crazy spring

My Windy Pines Cousin Michele sent me down 5 pounds of delicious rhubarb. I looked at recipes on the web and hit the jackpot with the ones from Land O Lakes website:

I made the following recipes: Crumb Top Rhubarb Pie, Rhubarb Cookie Cake, Cinnamon Rhubarb Muffins, and Rhubarb Streusel Bread. They were all delicious, easy and came out perfect! Have fun trying some of these recipes if you have any fresh rhubarb left!

Ok so 3 batches of cupcakes, 7 1/2 pints,4 pints, and 4 quarts later....
I have discovered it isnt 1 bush, its 3! What the heck am I going to do? LOL

Make sure you cut the entire leaf off and no root. Both are poisonous and can make you very sick. I cut them at my trash cans. I won't even bring them inside. I make everything with rhubarb. I make a syrup with it and flavor iced tea. Rhubarb crisp is one of my faves. We eat tons at my house. I have to got rob from the nieghbors to freeze for Christmas slush punch.

Aimee, I cut off the leaf and root off outside too. They are WAY to big and a big pain. It just is easier to do it outside.
I plan on freezing more tomorrow, I cut it up and froze it on a cookie sheet and then bagged it up. I plan ont doing it all over again in the morning. As well as making more jam!!
Do you have a recipe for syrup?

Amanda - you could take extra to the foodbank. My mom's church does the "Row for the Hungry" and she was just asking me about rhubarb - I guess a lot of the older food bank patrons really miss being able to get rhubarb as it is not something that ever gets donated. Her church is in the Spokane Valley, I think it's the valley food bank
I had the same problem with rhubarb last year, I think I harvested 80 pounds off one plant!!
