These are the best cookies in the world and so easy to make. My four year old and two year old pick these over chocolate chip cookies and they have been a hit at any gathering I have taken them to. They store well on the counter in a ziplock bag or in the freezer. I use dark organic molasses for the best flavor. Let me know what you think!
Ingredients:
2/3 c. vegetable oil
1 c. white sugar
1 egg
1/4 c. molasses
2 c. all-purpose flour
2 t. baking soda
1 t. ground cinnamon
1 t. ground ginger
1/2 t. ground cloves
1/3 c. white sugar

Directions:
Preheat oven to 350 degrees.
In large bowl mix oil and 1 c. sugar. Add egg and beat well. Stir in molasses. Add 2 cups flour, baking soda and spices. If necessary, add more flour to make a firm dough (I always have to add a little extra).
Shape dough into small balls. Roll in 1/3 c. sugar. Place 3 inches apart on an ungreased baking sheet. Bake 12 to 14 minutes or until tops crack. Remove from baking sheet and cool on rack.
HINT: You can take the cookies out a little early to ensure soft cookies or leave them in a little longer to make harder cookies.

Thanks, Elizabeth!!! I also use gingersnaps for a crust on a marsala cheese tart, but I think I'll just eat these....

I'll make these this weekend and make sure to have ice cold milk on hand--YUM!
