I'm starting this to go along with the trying to lose weight thread that was started. What would you guys think about posting some of our favorite healthy meals so others don't get bored while trying to lose weight? It can be breakfast, lunch, or dinner, snacks, desserts anything. I know I get bored trying to come up with healthy meals. I'll start:

Crockpot Lemon Garlic Chicken

1 tsp. dried oregano
1/2 tsp. seasoning salt
1/4 tsp. black pepper
4 chicken breast halves, skinned and rinsed
2 Tbs. butter or olive oil
1/4 white wine or water
3 Tbs. lemon juice
2 garlic cloves (I always add more )
1 tsp. low-sodium chicken bouillon granules
1 tsp. minced fresh parsley (optional)

Combin the dry spices and rub into the chicken coating both sides. Brown chicken in butter or oil in skillet. Transfer to crockpot.
Place the wine (or water), lemon juice, garlic and bouillon granules in skillet. Bring to boil, deglazing the pan. Pour over chicken.
Cover. Cook on high 2-21/2 hours on high or 4-5 hours on slow. Add parsley and baste then recover and cook on high for an additional 15 minutes until chicken is tender.

I serve this plain or over whole wheat pasta and add a simple salad.

That sounds wonderful and I might try it.

I'm a big fan of Moosewood cookbooks. The newer ones in particular have a lot of healthy recipes, and thay all include fat content, calories, etc.
