This afternoon a lady from church called and asked me to make a chocolate sheet cake for the women's guild auction tomorroe. So I went online and look for a recipe and took the one that had the highest reviews. Well, it had mayo in it. I don't have mayo, so I asked my hubby to stop and get some on his way home from work. Stupid me didn't look at the label til I was cleaning up the kitchen. It was Miracle-Whip...Is there a lot of difference in the two? The batter was kinda funky, so anyone know how gross it will be? Am I doomed to make another cake? |

I dont know, but let us know. I think it will be okay. It calls for mayo for moistness, but the miracle whip might make it sour?

I wish I would have known--my elderly neighbor makes a chocolate Texas Sheet Cake that she brings to every occasions (funerals, christenings, wedding receptions, bookreadings--just kidding--but whatever) and it's fabulous!!!
I think Amanda's right--it's for the moisture, but I always find Miracle Whip a little "sweeter" than mayo...hoping for the best!!!!!

I'm not sure what the status is....hopefully it's good (cross fingers) but I'm going to email you Ruby's (regionally famous) cake :) 1 cup margarine 4 tbsp cocoa 2 cups sugar 1 tsp baking soda 1 cup sour cream 1 cup water 2 cups flour 1/2 tsp salt 2 eggs
In a sauce pan, bring margarine, water and cocoa to boil; remove from heat and add flour, sugar and salt. Beat in baking soda, sour cream and eggs.
Pour into greased 12 X 18 inch cookie sheet; bake at 375 for 20 mins.
Frosting: 1/2 cup butter/margarine 6 tblsps. milk 1 lb. confectioners sugar 4 tbsp cocoa 1 cup chopped nuts 1 tsp vanilla
bring margarine, cocoa and milk to boil. Remove from heat and add nuts, confectioners sugar and vanilla. Spread over cake while hot.
This seems fairly straightforward, and not at all time consuming. You should hear the folks rant and rave over this cake :) I've been eating it at ALL occasiions since I was 4 or so and never tire of it. If your cake works and you don't need it, use it next time for sure :)

Yes, mayo makes it yummy and moist. The oil is what does it. I think there used to be a cake recipe on the mayo label.
Cheers, Heather

I am back to report that I think the cake will be OK. Not the best sheet cake ever, but it will do. Definately moist, with a very slight tang. But, I think once I get it frosted it will be better. If I ever need to make one again, I will definately use Ruby/Jonni's recipe. It sounds yummy. Thanks for the input, ladies! |
