Anyone else do sourdough baking? I stumbled upon the world of baking w/o commercial yeast this past fall and we are so hooked at my house! I have my own culture, but then for xmas my DH got me some international cultures from www.sourdo.com. The website is run by this guy who has collected cultures from around the world. They all have different properties, tastes, different leavening power, etc. I've been baking 2-4 loaves a week since December!

Anyone have any good/bad experiences with sourdough? Anyone obsessed like me? Anyone else try various cultures? Let me tell you the one from South Africa is INSANELY sour, like pucker your mouth sour - but only when you keep feeding it whole wheat flour. But the culture I made is hardly sour at all.

I have made good starters from kefir, potato water, and used a good one from someone else.
I love to have ferments going- they are so good for ya.
Sourdgh pancakes are the yummiest.
I use the kefir to drink, bake with (instead of buttermilk) and to start a sourdough culture once in awhile. I neve keep the poor thing going very long- a have a zillion babies around here to "feed" already. I use the whey to soak grains, beans, and to ferment raw beets and cabbage.
All from an interest in sourdough starters...
