is everyone making tonight for dinner?

I was so sick last night from eating SOOOOO much, I can't even think about food, but we'll need something! We have ham left over but....phrump. Ham.

Soup. :-) Ham, especially a ham bone if you have it, goes great in black bean soup if you like it, or red beans and rice...

Oh Jonni I am feeling like a big pudge too. We still have leftover turkey & boring stuff from Saturday w/Jim's family, but I have goodies from my sis that can be nibbled on for a few days-Organic ham, pastrami, rye bread from Avril's, stuffed mushrooms, Florida shrimp, rumaki, asparagus wrapped in roast beef w/horseradish, 5 bean salad, & baked flour tortilla bites filled w/rice, chestnuts, turkey, yellow pepper & melted cheese. It is so fun to go to the fridge for 1 or 2 little items. I want to eat it all before New Years, so I can make a big pot of veggie soup & detox my body for a week or so.

I'm making a French onion soup tonight. Warm good and wards off colds. It will be a welcome lighter dinner. Easy to make and fulfilling. Good stuff =)

Hubby has to work tonight.. I rarely cook when he is gone.. it will be a fend for yourself night at my house.. plenty of leftovers and such for sandwiches and soup sounds delightful.

I sometimes use the leftover ham and create things like spaghetti but using chopped ham in the pasta sauce.
I also have made alfredo type pasta by using ham and green peas. It makes the ham seem less boring especially when you have enough ham leftover to last all week..ha.
And yes, with soup is great.
You can also mix it up with broccoli and rice and a cheese soup for a broccoli casserole.

I have a huge vegetable soup simmering on my stove as we speak. I am going to make a cornbread and call it a day. I could not wait to get the soup on this morning. I have had enough rich food to clough my arties for a year !!!!! I know that is what the holidays are about, but as I grow older, my system can't take the richness of the food that are a standard for the holidays (neither can my weight)

Down here for New year's we have black-eyed peas and cabbage. (cooked seperately) That is standard fare for the US? I am looking forward to that day . I love vegetables.

We're having some simple baked chicken with veggies and cornbread on the side. I've not been feeling too well with all the different foods over the past few days, so I also bought a couple of bottles of kombucha, which *really* helps with my "tummy issues." :-)

I also like making a lentil and ham soup by taking the dried lentils, some carrots, some onion, ham, and pepper. Adding water and letting it simmer in the crockpot until the lentils and carrots are done. you can mix it up with different veggies too.
ham, green beans, baby potatos in the crockpot are good too.
these are ideas for folks like me that are stuck with alot of ham left over from yesterday..ha

Well, I ended up getting Korean (Bim Bim Bop). It was soooo good, yummy spicy and it hit the spot. The little restaurant I go to is so sweet, but wear matching socks, cuz you have to take off your shoes!!!!

I am going to make some ham and lentil soup--that sounds yummy, and probably for breakfast this weekend, we'll have some ham hash. In fact, the ham and lentil soup sounds perfect for tonight.

***Linda, yep, black eyed peas for us on New Years Day--we call it Hoppin Jon (my daddy is from Lousiana, and I thought he named it after me ) with andouille over rice and cornbread. I have some hand ground corn meal that's just itchin' to get used from our trip to Sunflower Sundries. That poor boy's arm was about to come off, and here I haven't even used it yet!!!***

My husband ate more of the leftovers last night but I just couldn't. I've been eating that type of stuff for about a week now and I needed a change. I had some ravioli from a can. Probably not the best or most healthy thing I could have had, but it hit the spot.

Linda and Jonni, we eat black eyed peas and cabbage here every new year too. It's a tradition, my grandmother also told us to do it for health, wealth, and luck for the upcoming year.
