I have a goal to prepare several frozen meals (like 10 a month?) that can be popped into the oven or microwave by my elderly parents.

They both have to limit fats, sugars, and sodium. She has to limit potassium, and phosphorus. Dad is the cardiac patient and stepmom is the renal patient, but they are both diabetic.

Tomatoes are a no-no for her, as are dried apricots and fresh peaches and bananas. She is limited to 1/2 cup of milk a day. Excessive green leafy vegetables are a no-no for Dad, although he can have 1-2 servings a day. He should have whole grains, she needs refined grains and is to stay away from wheat germ and bran. This is going to make it challenging to make any kind of pasta dish or casserole.

Anyone else faced with these challenges? Any ideas for menus or recipes? What about freezer containers? Better to use ceramic, foil, or plastic? (I can think of advantages and disadvantages for each)

Wow. What a challenge, Brenda! We have a diabetes resource center here in town, but the one I found most helpful was in Toledo, Ohio....I've helped out a friend and her mother with cooking. I got some of my recipes directly from their site, and it's nice because there's plenty, and they're broken down with nutrition, sugars, etc...

What about buying two different colors of storage containers and then cooking his and her meals? You could cook the same "meal" but use the different ingredients. Like make lasagna and use refined pasta in one and whole wheat in the other?
