What do ya think can I make a good pie crust with oil? I know how to make good pie crusts with butter and I make pretty good pocket dough with oil. We make these pockets full of veggies and gravey. I don't keep much butter in the house and I just got all these plums for a friends tree and we were talking about pie crusts made with oil and I just haven't had any sucess with that. Does anyone have any recipes or advise.

There is a receipe for a butter free pie crust called Pat in the Pan piecrust. I got it out of a cookbook by Marcia Adams. I'll be home this weekend and I'll try and remember to write it down. It's super flaky. I searched the web but I can't remember if the recipe that came up is the exact same one.

Shortening makes a flakier pie crust than butter, and it doesn't require refrigeration. The problem with shortening is that it doesn't taste like much and is full of trans fats. If your problem is refrigeration (if that's why you can't keep butter), then lard probably wouldn't be a good option, either.

I'd choose shortening over oil. I don't think oil would work.

Thanks gals I don't keep butter only because we were vegan for a while and well I don't find that butter is a nessessity to life. I'm not against it I just don't buy it on a weekly basis. I'm always looking for alternitives, lard is completely out of the question since I still don't eat meat and I won't touch shorting either since I won't partake in hydroginated soy bean oil. I do buy butter for special things like this weekend, you cannot have cinnamon buns with oil. I just know there has to be a good pie crust recipe made with oil out there some where.

Here you go Melissa:

2 1/4 cups flour
1/2 tsp salt
1/2 cup canola oil
6 Tbsp milk
Combine flour and salt. Add oil and milk all at once. Toss gently with a fork. Dump mixture onto counter and knead into a ball. (Try to knead as little as possible as over-handling makes a tough crust). Cut in half and roll each half on a lightly floured counter. Makes one double pie crust.
