I am posting Tif's pie recipe and hope that she does not hunt me down for doing so! Also, the Banana Bread Pie recipe from the Jane's Apron blog. Yummy, yummy for the tummy.

Tiffany's Vidalia Onion Pie

1 1/2 cups crushed Ritz crackers
6 T butter, softened
2 cups thinly sliced Vidalia (or any other sweet) onion
3/4 cup milk
2 eggs
3/4 tsp salt
3/4 cup packed grated Cheddar cheese
paprika

Preheat oven to 350 degrees.

Mix crackers and 4T softened butter together and press into the bottom and 1-inch up the sides of a 9-in pie dish.

Melt remaining butter in a heavy-bottomed medium skillet over medium heat. Add onions and sauté until tender. (About 12 minutes.) Place onions into crust.
Beat together milk, eggs and salt until blended. Season with pepper.
Pour egg mixture over onions. Sprinkle Cheddar cheese over top. Sprinkle with paprika.

Bake pie for 35 minutes or until a knife inserted in teh center comes out clean.


Banana Bread Pie

Super-duper easy!
Preheat oven to 400 degrees.

Mash 2 ripe bananas in a bowl.

Add the following ingredients:
1 can sweetened condensed milk
1/2 cup baking mix (like Bisquick or Farmgirl Budget Mix)
2 eggs
1 T melted butter
1 tsp vanilla

Mix all ingredients together well and pour into buttered 9-in. pie dish.
Bake for 20-25 minutes or until sides are caramelized and center is still a bit soft.
If you serve it warm, make sure to have a side of vanilla ice cream!

Yum, does this onion pie work better as a side dish or a main meal? Sounds like it would be good for breakfast!
