I made these blueberry whoopies for Ray lunch and they were a big hit. He had to take two extra for work today for some guys. Enjoy...
1 box yellow cake mix
2 cups flour
2 T. baking powder
2 cups of fresh or frozen blueberries
In large mixing bowl combine cake mix,flour
and baking powder.Add other ingredients that are listed on the cake mix box:eggs,water and oil. Mix well for several minutes. Fold in blueberries. Drop on greased cookie sheet and place in a 350 degree oven for 15 minutes. Cool on wire rack.
Filling ingredients
4 egg whites
1 1/2 cups shortening
4 cups powdered sugar
2 t.vanilla
Beat egg whites until just past the stiff peak stage add shortening powdered sugar and vanilla. Slowly mix till sugar is combined.Beat on high for several minutes adding powdered sugar as needed to reach desired consistency.
Frost the inside cake..
These make about 14 I use a med ice cream scoop..

Brenda, these look really fun! Do they bake on the pan in lumps sort of like biscuits, then do you just split them open like a cream puff and stuff the filling in between the top and bottom? I'll give this recipe a try -- it would be a fun thing to do with little kids helping, too!

OK, first tray is out of the oven, and second tray is baking now! The batter is just gorgeous, and tasty...I checked! I will make the filling for them later on today so it is fresh for assembling and eating.
Brenda, how in the world did you come up with the recipe name, or do I dare ask? I didn't think about it until I said it out loud, as in, I'm making blueberry whoopies, and it reminded me of that old game show (The NewlyWed Game) reference!

You put the scoops on cookie tray you don't split them you flip them upside down fill one and then take another cake put on top like a sandwich.. Any other questions please ask away they are so good.. countrygirl

So glad you are making them aren't they fun and taste so good. I got the recipe from the local newspaper.. (Whoopies are big here in Maine.) Don't know where the name came from there are pumpkin-choc that is my favorite and the list goes on.. Even strawberry just let your mind go and let me tell ya they taste so good!!! Yum, they are delicious! I had to leave the house before I read that you use 2 whoopies per serving, so I goofed and split them and used a bottom, covered by filling, then sat the top at an angle. Addwed some fresh sliced strawberies and more blueberries to teh plate and it was a great dessert for family on Saturday night. The 2-1/2-year- old loved them, the aunt and uncle loved them, and DH got two on his plate (without filling) for creakfast this morning! Great recipe, and thanks for the ideas to try different fruits in the batter.
