DH shared with me the other day (this after 37 years of marriage) that he really missed having dessert after a meal. His mom always had some kind of simple dessert after every dinner (and she had 9 kids!). We used to have pudding, etc. after dinner a lot more when the kids were home, but now I hardly ever do. So, in the interest of a happy husband, I'm looking for some quick and easy dessert ideas. He'd love to have pie everynight, but I don't have that kind of time!

Pie can be pretty easy!

I made a fresh strawberry pie that takes no time at all.

1 quart of strawberries/hauled and sliced/cut in half
1 premade shortbread cookie pie crust
1 strawberry jello
1 cook and serve vanilla pudding
water (hmmmmm can't remember how much, I think it was like 1 1/3 cup though)

put the strawberries in the pie crust

cook the cook and serve pudding, jello and water on stove top constantly stirring till it starts to get thick and hot. Then pour over strawberries. Put pie in the fridge. (I did this over night) Then I covered the top in cool whip lite.

Tomorrow I'm going to make the same thing but with peaches and lemon jello instead of strawberries.

oh yeah you can also make quite a few kinds of no cook at all pies using instant pudding mix. (use powdered milk for a thicker/richer texture). And premade pie crust.

I like to make some of MaryJane's Chillovers. The Brown Sugar and Cream one was a huge hit! Doug said it tasted just like Cookie Dough! Next time I might fold in some chocolate chips!

Simple desserts, hmmm....

Well, one that I've done many times is to take two little white china ramekins, butter them, put a cored apple in each one, fill the apple cavity with a praline pecan syrup my daughter put up, and dot with butter and bake until tender. It's really just a piece of fruit with a bit of sweetening.

I also make a mixture of sliced bananas, grapes, orange slices, chopped apple, sliced kiwis, raisins, and chopped walnuts in a splash of orange juice to prevent browning, and then spoon them into dessert dishes and top with a bit of real whipped cream or ice cream. It's pretty simple, too.

I also like to take slices of pound cake, top with fresh sliced strawberries that have been macerated in a little bit of sugar and vanilla, and either whipped cream or ice cream.

Irish coffee and biscotti is good, too, as well as homemade cookies. You can spoon off the dough and freeze the dough wads on a cookie sheet and freeze, then put them in plastic ziploc bags. Then you can just pull out six or so and have hot cookies without drowning in them.

When I do make cakes, I like the old fashioned ones with lots of things in them. I like good carrot cake full of nuts with cream cheese icing, poppyseed cake, banana bread, or applesauce cake with lots of chocolate chips, nuts, and raisins. I have to be careful though, because there are just two of us, and it's easy to get buried in certain foods.

MaryJane created her chill-over powder for those who don't like to eat gelatin because it is made from animal (mostly pork) by products. It also doesn't melt at room temp. It is a colorless, tasteless gelling powder. There are lots of recipes for great chill-over desserts in the Ideabook and in the magazines.

A quick and easy dessert to make is to put melted white chocolate over frozen berries. The two come together beautifully and taste delicious.

Jenna, although pudding in a wine glass WOULD make him happy, I'm not sure that's all it would take LOL!

Well Sherri, I have the opposite problem...
I love to bake all sorts of goodies, but I have a husband who doesn't like most sweets...
He has a few that he really enjoys (the really time-consuming ones, of course!), but often I'll bake something and he won't even try it.
