Hi all! I don't know if you all read my other post about the report we got from moms dr. But anyway she is supposed to only eat fruit and veggies and whole grains. She is very worried about being able to come up with a variety to eat. The dr. said no oils, no meats (not even fish or chicken), and no dairy products. The blockages are all so bad, they have refused to do surgery because it would be too dangerous. So a major stroke is a scary possibility. With the blockages so bad, and they give her no hope but diet and meds, I don't see what it would hurt to eat what she wants. But she wants to eat healthy as the dr. has told her to do. Mom and dad really have always ate pretty healthy, but fish and chicken was included in the diet. If any of you have some recipes you could share or any ideas I would greatly appreciate it and I know my mom would too!

Mikki,
what about Tofu? it can be used as a meat(protien) substitute.
I buy tofu meat(less) balls & use in my spegehitti sauce.
I also use a product called "gimmielean", (soy product) I crumble it up, cook it in a skillet
w/ taco seasoning & use it in my tostadas & enchiladas dinners. It really is good.
BUT!!!! do not make a tofu pumpkin pie!!!! my family nearly gave me up for adoption when I made a tofu pumpkin pie for Thanksgiving several years ago!
Oh, also I use extra firm tofu in place of pasta in soups, cut it up in juliann strips in place of pasta, it provides the protien so you don't have to use meat.
No I am not a vegitarian,,,,just try to not eat very much meat & I actually like tofu! I even eat "tofutti" an ice cream made from tofu (soy). Evan my DH likes tofu,,except for that dawgone tofu pumpkin pie!!!!!

Hey Mikki,

I have my "baked oatmeal" recipe that I'd be happy to share It has NO sugar, NO dairy products (except a few egg whites) and you top it with honey and cinnamon.

I use dried fruits and different nuts in it but that is up to them and what they like.

I came up with this with the intention of keeping our Cholestral in check.

Let me know if that sounds like something you would like to have....It starts on top of the stove and then is finished in the oven for about 15 minutes.

try bean dishes, fresh fruits, veggies. use things like spices.(oregano, basil, parsley, rosemary, thyme, cilantro, coriander, or cumin)
white wine vinegar can be used to season foods and keep them moist when cooking without using butter/oils.

Meat Substitute
Dry peas and beans and tofu (bean curd) are great meat substitutes that are low in saturated fat and cholesterol. Dry peas and beans also have a lot of fiber, which can help to lower blood cholesterol. Try adding a ½ cup beans to pasta, soups, casseroles, and vegetable dishes. Tofu takes on the flavor of marinades well. Try marinating tofu in a nonfat dressing or a tangy sauce and grilling or baking for a heart healthy dish.

There's a breakfast or snack shake that just calls for a banana or 2, around a 1/4 cup of blueberries and a little water. You can add as much or as little of the ingredients as you want. It really is very good. The banana makes it thick.

How about a hash with beans instead of meat. Here is how to make it.

1 pound small red potatoes, cut into 1/2-inch cubes
1 tablespoon olive oil
1 small onion, diced (about 1 cup)
1 green pepper, diced (about 1 cup)
3 cloves garlic, minced
1/4 teaspoon ground cumin
1/2 teaspoon dried oregano
1 teaspoon ancho chili powder or other chili powder
3 medium tomatoes, diced (about 2 1/2 cups)
1 can no-salt-added black beans, drained and rinsed
Salt and freshly ground black pepper
1/3 cup chopped fresh cilantro leaves
4 eggs
Hot pepper sauce, for serving

Place the potatoes in a large non-stick skillet. Cover with water, bring to a boil and cook until the potatoes are tender, about 8 minutes. Drain and set potatoes aside.
Dry the skillet with a paper towel. Add the oil and heat over a medium-high heat. Add the onions and peppers and cook until vegetables have softened, about 6 minutes. Stir in the potatoes, garlic, cumin, oregano, and chili powder. Add the tomatoes and beans and simmer for 5 minutes or until heated through. Season with salt and pepper. Stir in cilantro.

Transfer the hash onto serving plates. With the heat off, wipe out the pan again. Spray it with cooking spray, turn heat on to medium-low and cook the eggs, sunny-side up, or over-easy. Put an egg on top of each mound of hash. Serve with hot sauce.


The recipe calls for one TBS of olive oil but you could easily omit and use a little water instead to prevent sticking.

I just got back from mom's. She's feeling well, and was so happy for her sweet mini apron from sewgirlie! It means a lot! We talked some about her diet. She's very creative so I'm sure she'll come up with some tasty stuff. I'm wore out today, I'm going to the cabin for a rest and plant some herbs. Thanks for all your help!!! I love you gals so much!
