I am interested in drying some herbs later on from my herb garden that I'm working on this weekend. My question is, when harvesting your not supposed to allow the herbs to bloom. So after harvesting some, can I allow the rest to bloom then? I want the best of both herb gardens, lol. I guess I could plant some and allow them to mature and harvest the other bunch??? Am I being greedy? I want my blooms!!!

You can harvest what you want or need and let the rest bloom and enjoy them that way. You harvest herbs for drying just as the first flower buds begin to open. The oil in the leaves is most concentrated at this time. Also cut in the morning after the dew has evaporated. Another way to harvest herbs is to remove all leaves and lay on a screen placed in a warm, dry, airy place out of the direct sun, stir around every few days as they dry. Hope that helps. the ones you let bloom you can then harvest the seeds when they turn brown. MB

I do it exactly as MaryBeth described..and I love the blooms too, so I always plant extra to let some bloom.
