I tried a new recipe for carrot cookies and they were terrible. I have the best carrot cake recipe and was wondering how to adapt it to a cookies recipe. Do I just add more flour?

hi,
to make cookies from a cake mix just use a bit of butter and 1 egg and just a touch of water to moisten to make a stiff drop from the spoon dough.no need to add extra flour.
then bake at 350 for about 8-10 minutes. you can use any type of cake mix and add chips in a flavor that matches the cake mix.

I also have a carrot cake recipe that I love, So no cake mix will do for that, But These are great sandwich cookies filled with traditional red velvet cake hot milk icing.

Make the balls small... and fill when they are cool.


INGREDIENTS:
2 (18.25 ounce) package red velvet cake mix
4 eggs
2/3 cup vegetable oil

DIRECTIONS:
1. Preheat oven to 325 degrees F (165 degrees C). Lightly grease cookie sheets.

2. In a medium bowl, stir together the red velvet cake mix, the eggs and oil, mix until well blended. Roll dough into 1 inch balls, and place them onto the prepared cookie sheet. Flatten the balls slightly with the back of a spoon or cookie press.

3. Bake for 10 to 12 minutes in the preheated oven, until firm. Let cool on the baking sheet for a few minutes before removing to cool on wire racks.


I love recipes that use a cake mix.

What is red velvet cake mix. I looked at the grocery and didn't find anything called "red Velvet"/

Red Velvet is just a kind of cake such as Yellow or Devils food. It is red, very rich, and has a slight chocolaty taste.

Here is the icing recipe. I feel it is totally ok to use boxed cake mix.... but home made icing is a must.

Red Velvet Icing

Cook until thick stirring constantly:
3 T flour + 1 cup milk
Cool to room temp

Cream 1 cup powdered sugar with 1 cup butter until fluffy. Add 1 t Vanilla.
Gradually add cooled flour mixture beating constantly. Spread between layers.

I always make a double recipe.we alike a thick layer of icing in these.

E-A-S-Y Cake Mix and Cool Whip Cookies

1 (18 1/4 ounce) box cake mix (any flavor desired)
1 (8 ounce) container Cool Whip
1 egg

Mix all ingredients.
Form into balls.
Roll in confectioner's sugar.
Bake at 350 degrees F for 10 to 12 minutes.
Cool in pan a few minutes before removing.

Nnote: German Chocolate or Strawberry cake mix works well with this recipe.

Thanks, I Love semi homemade baking with cake mix. Some where I have a recipe for lemon squares my mom used to make. We called them gooey bars growing up.
