I have heirloom rhubarb in my garden and will go down the road to the neighboring farm to pick strawberries to make some strawberry/rhubarb jam aka pie filling. Anyone with a tried and true recipe?

When I was 15 I worked at the Tally=Ho restaurant in the pie room cutting piece after piece of pie for the dinner crowds. My favorite was the straw-rhubarb pie. Boss would walk in and I'd have a mouthful of the leftover chunks I had scraped out of th epie tin. YUM!!!!!

This is from my familys " old family recipe" passed down.
Make Pastry for Two-crust pie. Line pie.
For the filling for 9inch pie:
Mix................1 1/3 cups sugar
1/3 cup flour
Mix lighly thru....2 cups cut-up rhubarb
2 cups cut-up strawberries
Pour into pastry lined pan. Dot with 1 1/2 tblsp butter

Cover with top crust which has slits cut in it. Sprinkle with sugar. Bake at 425 for 45-50 min. Bake until crust is nicely browned and juice begins to bubble through. Serve slightly warm.

Warm with vanilla ice cream melting into it is YUMMY!!

I just made a Straw/Rhubarb pie last night for curch potluck. MMMMM!
Not a crumb left. Marybeth's recipe sounds like mine, though I tend to use a bit less sugar as I like it a little tart. I brush the top with either buttermilk or an egg wash then sprinkle sugar. Warm, with Ice cream, yep, yummy!

My recipe is very similar though I add a little flour, corn starch or arrowroot powder to help thicken the juice. I use about the same sugar but also squeeze in a whole lemon's juice as it enhances both the strawberry and rhubarb flavours. My Gran also added a tsp. or two of vanilla extract. Happy pie making, that is my favorite pie next to lemon meringue!

If you are watching you sugar or you have diabetics in you family I have a great recipe for strawberry-rhubarb pie with no sugar. It has apple sauce to sweeten it instead. My honey can't even tell the diffence. I know this because i had to trick him into eating it. I did not tell him it was the no sugar pie till he had eaten three pieces. Let me know if you want the recipe, i have to get it from home.

Valerie -- I'd love the no-sugar rhubarb recipe as well! Would love to make a pie. Also, I love stewed rhubarb, but the amount of sugar needed is over my limit. So I'm thinking it might be possible to make a cooked rhubarb using applesauce for sweetener as well? Hmm, may have to adapt from the pie recipe.

Pretty please??

Oh my goodness!! I was going to post to ask for a killer rhubarb pie recipe and here it was already!! I'm copying, I'm copying!!

Ok, Mary Beth, I have coppied your recipe and am going to try it. I'll let you know how it goes...

I'm not a 'cooker' at all but I can sure do dutch oven cooking...you can't mess that up!!
