Just wondering if any of ya'll vegetarians? What are your favorite, simple vegetarian recipes? What do you grow? What is your favorite food to eat?

Me- I loved spinach rolls, basically you take cooked lasagna noodles, roll spinach, parmesan, ricotta and diced tomatoes inside the noodles, kinda like small enchiladas. Cook with a little olive oil drizzled on top just to heat through...YUMMY!!!

I am also learning how to make my own bread.

Part of the reason I am a vegetarian is health and the other is I want to be as self sufficient as possible and the idea of killing my own animals for meat just doesn't sit well with me.

I am not really a vegetarian. I eat fish and chicken quite often and redmeat on occasion though I try to avoid it most of the time. I try to make sure that my dinner plate is around 80% vegetables.

I used to be a veg (for 8 years) and I can't really say why I stopped except that I missed bacon....I stopped eating meat as a personal choice--I was living in England at the time and there was an "unspoken" warning about british beef, so it was easier to just cut it all out. Starting to make sense again, too, I tell you.

My fave favorite recipe from then, which I still make (and eat by my lonesome because dh says "it has no meat?!" is the Fall River Vegetable Stew from Sunday's at Moosewood. It's probably one of the most wonderful vege stews I've ever had, and tastes better and better as the days go along. Freezes well, and I make it for neighbors who are sick, have a death in the family, potlucks, whatever. Even meatlovers love it (except dh :)) It's comfort food of the best kind. At that time, I was also into curry, and made a lot of vege curries with tofu or without, over brown rice. Curried Pumpkin soup and Curried Sweet potato soup. Shephered's pie with shredded tofu in place of the meat part....Gosh. When I was a vegetarian, that's when I really learned how to cook, I think, because there were so little choices out there in stores, or restaurants. Being a veg means more than eating a salad!
If you'd like any of the above mentioned recipes, I still have them--hubby eats the curried sweet potato soup and curried pumpkin soup, so in that sense I'm lucky!!

I grow potatoes, carrots, broccoli, corn, peas, tomatoes, peppers (sweet and hot) and herbs. That's about all I need, really.

Those spinach rolls sound wonderful--I may try those this week. Do they keep well for lunches? I'm actually attempting to get back to a more vege friendly diet, but it's going to mean cooking 2 separate meals for dinner!

The spinach rolls can get a little watery if they sit( the darn spinach does that). I make small batches but I never have leftovers so I don't know if they work the next day!!! : )
I have never freezed them though..maybe I could try that.

I have been a vegetarian off and on over the course of the past decade...more on than off, YAY! and I just got back on my veg nature after about two years of meat eating. Being pregnant with Zoe made me crave it.

We have been eating veg more here than not...and I haven't had meat in a long while now. Rob is not really aware that he is not eating meat, but he is noticing he has more energy and is trimming down a bit.

We had veg. tacos the other night with tofu 'ground beef'

Rob and I had a nice dinner without the girls...I fed them and they went to bed and we ate later...it was pesto stuffed tofu steaks with curry couscous, tomato sauce and pickled artichoke hearts...all of it was home made sans the tofu and the artichoke hearts. He really liked it. YAY!

I always feel better not eating meat. I cannot remember the study but there was one done recently and it showed that those who maintain a healthy veg. diet are healthier. We really were not made to process as much meat as we actually eat (collectively speaking.) We should be eating more veggies and grains than we do, that's why we are omnivorous animals...an equal balance of the really good for us things and only a modest amount of those that aren't so great for us.

Whats for dinner tonight? Home made cheese ravioli, homemade tomato sauce, a steamed veggie and some bread.

oh and who needs meat when you sit and nosh in your garden all day while pulling weeds or mulching or harvesting? Two for the basket one for me, two for the basket one for me....

We had cut out all pork and beef until my last pregnancy. I craved meat so we started again, but only organic. Now my baby is 16 mos. and we haven't broken the habit again (though I would love to!).

I have the pendulum of veg since age 12 = 25 years this summer. I was strict vegan for a short while, then started incorporating dairy, eggs, then later fish and poultry. Then, it's back to oct-lavo, which is what seems to be my baseline. I seem to go in cycles; now I'm in a no-fowl stage for about the past 8 months or so. I do however love fish and shrimp.

I rely on a lot of Mediterranean-style dishes: I have all the Jamie Oliver cookbooks and use the non-meat/poultry dishes quite a lot. I have subscribed to Cooking Light magazine for a decade, and always go back to the "Inspired Vegetatian" section again and again. We've lately been living on roasted veggie-and-goat-cheese sandwiches. YUM!

My hubby is a diehard red meat eater, though since he does not cook and I will not cook it for him, all our home cooked-meals are veg. When he wants meat, he takes me out to dinner. Not a bad arrangement, to say the least.

We are! Well all except my 7 year old. I am newly converting, my hubby is totally for the past few months...woke up one morning and said, I can no longer eat anything with a face. My 9 year old is almost totally too.

It is a challenge having eaten meat all of my life, but I am truly enjoying this lifestyle. I feel so much cleaner inside and out and my girls have slimmed down alot. So I do think it is the correct decision for us. Anyway, my favorite recipe. I made up one that was soooooo yummy, couldn't get enough of it.

Cous cous
saute in olive oil until toasted, then add it to the following that have been sauted gently: mushrooms, onions, green peppers, zucchini, (and any fresh veggies you might have lying around....cut them small and saute) then add enough veggie broth to plump up the cous cous. Add a couple of TBSP of tomato paste and simmer very gently until cous cous has absorbed the broth.

Stuff this mixture into blanched hollowed out green peppers or roll up in lightly steamed cabbage leaves and sprinkle with parmasean cheese. Back in a 325 oven until heated through and cheese is melted. Oh, my even my non vegge daughter liked this one! Of course add whatever herbs you desire!!

I have been making up recipes and some are FAB and others peeyyoooo. I made a lentil chili that my hubby said would rival any chili in a competition.....it is quite long and drawn out though, but makes a huge pot and is well worth the effort!!! If you want that one, I'll post it too.

Gotta run and get some painting done in the kitchen.

I've been veg on and off since high school. There were even years when I was a strict vegan. My kids were pretty much raised on the cookbook Laurels Kitchen. BUT my hubbys a Huge carnivore, so keeping him happy hasn't been easy. Now with the kids gone, I've kind resumed a well, "if ya can't beat em join em" attitude. With just the two of us, I got tired of him rolling his eyes. So now we grocery shop together and I let him get whatever he wants. But I do feel the veg lifestyle is the best for your body and the planet!!!!

I've been veg since I was...sixteen, I think? My mom was in night school and I was making dinner, so I just sort of quit eating it, and no one noticed for months. Holy moly, That's about half my life! I can drum up some recipes if you like...mainly I focus on whole grains, organics wherever possible, and I try to keep tomatoes, sweet potatoes, dark leafy greens, dark berries and juices, and winter squash in pretty constant rotation. My hubby eats meat when he's not with us, mostly out of habit/convenience. He tells the kids that he thinks meat isn't the best choice for him, and that he's working on it...sounds like smokers of our parents' generation...that just struck me! Huh.

I was raised vegetarian (so that would be 35 years), so was my mother (she is 56) and of course my kids are being raised the same. I was raised that way both for health and religious reasons. I continue it because I can not imagine eating meat!! It is funny how you are raised affects your view on things so much! I was raised vegan but now am Lacto-ovo Vegetarian (meaning I use milk and egg products) My DH grew up eating meat and I cook it for him ( I can cook it very well!! Just dont ask me to eat it!! lol)
I have a lot of favorite things to eat. I eat differently then alot of vegetarians. I eat and cook very much like a meat eater. I use many regular recipes by substituting out the meat for various things such as meat substitutes, tofu, etc. In fact I prefer regular cookbooks to vegetarian ones most of the time! Since I cook often for those that eat meat, it is important to me that it taste good and is something they are familiar with. Some of my favorites are tofu marinated with BBQ sauce for sandwhiches, Tofu enchiladas (no one notices it isnt meat!) Sweet and Sour chicken (made with a meat analog) Weatgerm and Oat patties with mushroom gravy and more. I love being vegetarian, I LOVE to cook, and I love making healthy things that no one dies for that everyone loves to eat!

I dont grow anything right now but I will as soon as we settle ...a whole mess of things!! lol My favorite meal is rice, baked sweet patatoe, and a meat analog called skallops. Other then that I love patatoes, sweet patatoes, carrots, peas, corn, tomatoes, butternut and acorn squash, mushrooms, onions for cooking, romaine lettuce, just about every berry there is and every fruit there is! And yes, I could never kill my animals to eat them...put them down if they are sick yes...but kill them for supper...I just couldn't do it . When we settle IF Dh wants meat he will have to find another farm so he can get organic beef and chicken...cuz not from my farm!! lol

I grew up on mom and grandma's (then grandpa took it over after he retired! ) homemade bread from scratch. They bought the wheat and ground it just before making the bread...yummie!! I hope to do the same once we settle! It is soooo good and yummie!!

I am mostly a vegetarian, but not a strict one-if I'm in someone else's house, and they are serving meat, I'll have a little.

One of my favorite recipes is a simple summer one-swiss chard and pasta.
Just saute garlic to taste in a pan of olive oil. Throw in the chard, and cook until the chard gets a little soft and wilty. Season with salt and pepper. Serve it tossed with or over pasta with a little grated parm. or romano cheese. You can also use spinich. It is soooo good. I planted my chard and spinich a week or so ago-can't wait!!

The spinich rolls sound yummy-I'll have to try them!
