Judith, I'm comin' to your house! That sounds great! We are having leftover Birthday cake, too! One of our grands just turned 15! Time certainly flies!

I didn't have it for dinner, but I did have it at 2 a.m. this morning. One of the downsides of aging are restless nights. While I was up I made Italian sausage meatballs cooked in a 28oz can of crushed tomatoes. I made the meatballs while the crushed tomatoes came to a simmer, and the oven came to 350. The way I make meatballs is to not brown them but put the raw meatballs into the hot tomatoes for a few minutes then into the oven for an hour. I had small hamburger buns in the freezer, so I had the Italian sausage meatballs with a little tomato sauce for a very tasty sandwich. I hope you try making meatballs without browning but I don't recommend doing it in the middle of the night.

We went to an Ethiopian restaurant for dinner today. I had a delicious lamp stew and got to eat it with my fingers.

Lunch today was chicken soup from the wings I cooked for broth, leftover broth from canning, and Ramen noodles. Tasty and fast.
Early supper will be Italian sausage, red onion, and red cabbage.

Sara, we did a decent amount of sausage this past week! Tortellini, sausage and kale soup. DH attempted some sausages which did not come out as great as his past batches, so we used the filling for chicken sausage patties and froze them!
Jess, that was my move this past week too, it’s nice to take half the sandwich home and not have to make my lunch the next day. The fries end up being a loss for me unless I put them in the air fryer which works great to crisp them up!

Kate, how great to have homemade sausages. Kale & sausage soup is one of my favorite soups. I like little red potatoes in mine.

My Husband and I have been working through the food in our freezers as sort of an experiment. We are trying to cook meals using only what is here and have been doing a pretty good job of it! We are getting to things that we will be able to make casseroles using what is here! So I will be working on the new casserole badge. Yippee! We are having fun making use of our freezer and pantry. We have not been to the grocery store to buy things with the exception of toilet paper and the distilled water for my Husband's apnea machine. It looks like we may be able to do this for at least a couple more weeks. Kind of scary that we have so much stuff in the freezers, but we are very happy to be able to experiment like this.

I have also been trying to eat out the freezer. It's full as DH goes hunting and buys meat on sale. Tuesday I went out to get something for dinner and found things on the top partially defrosted. Oops -- dead freezer. Fortunately we have several large ice chests and a trip to the grocery store for dry ice solved the problem temporarily. Wednesday DH bought a new freezer and Thursday the old one went to the recycling center. At least I didn't have to decide what to take out for dinner; the choices were made for me: pork, pork, and chicken. And beet greens.

Tonight's dinner: two thick pork chops, mushrooms, and a can of mushroom soup in the crockpot for 6 hours over brown rice. And beet greens.

So glad you discovered the dead freezer before everything was ruined! I like to put cube steaks and cheddar cheese or cream of potato soup in the crock pot like you did with the pork chops. The soup makes a wonderful gravy for mashed or baked potatoes.

Judith, so happy that you discovered your freezer had died before you lost everything in it. Also happy the it went to the recycling center instead of the dump. Enjoy the new one, and keep eating from that freezer!

Judith, I am glad you found it too. Sadly a few years back we didn't catch ours in time and we lost a lot of meat. Now I check mine all the time to make sure it never happens again.
Heather, I will have to try that with my cube steaks. I have never been a fan of them and I have always been looking for a yummy new way to cook them.

That's pretty much the only way we eat them (you can put them in the oven too). I'm not a big fan of them either.

Krista -- we lost a full freezer once too. Discovered it upon returning from a vacation. We never could get the smell out of it in spite of many scrubbings with cleanser, lysol, vinegar, etc.
