Today I'm pickling 8 eggs I got from my great-great nephews and niece. They are small and that's how I like my pickled eggs. Haven't pickled eggs since my sister no longer had banty chickens.

If anyone wants the recipe I will make a copy and mail it to you.

No, but I did use the juice from store canned slice beets. Now to figure out what I am going to do with 2 cans of sliced beets. May have to make up a brine and pickle them too.

I love pickled eggs! My dad used to save the brine from hot pickled sausage and put the eggs in that. So good! So I have a propensity for the HOT spicy pickled egg. Let me know how yours turn out. I made some last year from a recipe on YouTube that were spicy and fairly good, but somehow weren't the same as I remember from my childhood.

Lisa, today's food never tastes as good as yesterday's memories.

I put the pickled eggs in two pint jars, one jar went home with my great nephew. It'll be two weeks before the pickled eggs will be ready to eat then I will let you know how I like them.
