Thank you, Girls, for all of the kind words! I am 71 and learned to can in my younger years from my Mother-in-law. We were renting a small house that had a peach tree in the backyard. I am so glad that I learned such a valuable skill from her. Now my husband and my GrandGirls are learning from me. Having a great time in Southern California!

Yesterday I dehydrated the tomato skins that were left over from the sauce that I canned. My husband was so happy to help me with those! He loves to put them on our morning eggs! We have put them on breakfast sandwiches, too! So good!

Nancy, you have been busy! I love all of the tomato products as well. I do the skins too, but mainly use them as a thickener. Last night I did some air fried chicken tenders, pulled out a jar of tomato jam from last year, mixed it with a little mayo (Dukes of course!), and a dash of Sriracha for a nice dipping sauce. I am helping a friend that is on vacation with watering her garden and came home with some huge zucchini. I will make zucchini relish and am considering the mock apple pie filling. |

Nancy, I dry tomato skins and put them through the blender to make tomato powder. Like Lisa I use it as a thicker and also to add more tomato flavor.
Lisa, zucchini relish is very good. Happy canning.
