The other day I made potato & kale soup, so I boiled 6 red potatoes in their jackets (skins on). I used 3 for the soup; the next day I made home fries with 2; the third day I made warm mustard potato salad with the last one.

Warm mustard potato salad for one.

Heat one boiled potato in micro-wave. Mash.
Add mayo, yellow mustard, salt & pepper, onion powder, and sweet relish - all to taste. If you have it a hardboiled egg is good to add.
