Posted - Jan 02 2025 : 05:50:31 AM Today on "What is everybody canning?" Michelle posted how she made chicken soup with all her home canned ingredients. Hope she will do so here. Got me thinking we need a place to talk about how we use our home canned foods.
The other day I wanted to make baked pasta but didn't have fresh ground beef, so I used 1 pint of my home canned ground beef and 2 pints home canned spaghetti sauce. Cooked a package of spaghetti and mixed it all together in a casserole dish. Baked at 350 for 45 minutes. Very tasty, had one serving for lunch, and I froze 6 servings.

Posted - Mar 30 2025 : 04:52:06 AM Here is an easy soup to make- White Chili. A jar of chicken stock, jar of chicken, jar of great northern beans, jar of green chili's, a bag of frozen corn, 4 oz of cream cheese, and spices. Throw all but the cream cheese in a crock pot, and let er cook. Add cream cheese a while before serving. I forgot to add half and half, but it was still good. I never made this before, and this is a keeper. Recipe off the internet- The Chunky Chef.

I'm also having pork loin, but it is from the freezer, in the slow cooker with rosemary, s & p and a pat or 2 of butter (I like that flavor boost) Then some field peas that I got at the local IGA in a HUGE pack for $2. I am stating right here and now that I am committed to a better garden this year. Last year was a bust, and hopefully that means more canned goodies. |

Posted - Mar 25 2025 : 09:30:34 AM Today it's a pint of pork loin with tomato paste, red onion, my dried Greek oregano, powdered garlic & onion. Cooked in the oven with a pint of carrots and a pint of sweet potatoes. Should be a tasty fall early supper in the spring. Used three jars of canned goodness today.

Carrots to cook with honey & ginger for supper; ground beef & spaghetti sauce to make Texas goulash, more red onions, Mexican oregano, ground cumin, & red pepper flakes.

Posted - Mar 20 2025 : 06:36:46 AM Today it's soup I made from the leftover stew meat and veggies from canning beef stew. Only one small serving so I will add a pint of my chili & beans to make chuck wagon soup that way I can have it for lunch and supper.
Michelle hamburger meat is always a good place to start cooking. If you are pressed for time sloppy Joes is a good choice.

Posted - Mar 20 2025 : 05:35:06 AM Had one of those days when, whats for dinner? Don't feel like cooking either. I go grab two pint jars of soup, and some freezer biscuits to cook up. Now it is a new day, have hamburger thawed from yesterday, but no ideas yet on what to make..........lol. It is early yet. lol Happy Cooking!

I wanted to get all the empty jars in one area, and see how many empty I had. Syrup season is coming fast. So I grabbed jars that I wanted to bring upstairs. Christmas jam, rhubarb and elderberry juice, apple pie filling for a pie, peaches, and applesauce. An inventory does let me figure out like how many tomato plants to start, and so on. I love shopping in my basement lol.

Posted - Feb 17 2025 : 3:02:44 PM Lisa a couple of years ago you posted about putting pumpkin in your chili and I tried it and liked it. Don't remember why I didn't can pumpkins last fall, probably didn't feel up to it at the time pumpkins were in the stores. I didn't have pumpkin for my chili, but I did have canned sweet potatoes so used them instead. Sweet potatoes should be in the pumpkin family because they are so much alike.

Posted - Feb 17 2025 : 1:43:54 PM That sound so good with the stew meat instead of ground. Your spices sound so on point for my taste buds! I always add pumpkin to my chili as a thickener, including my dehydrated pumpkin dust. If anything, it adds a bit of sweetness along with the thickening. |

Posted - Feb 17 2025 : 09:05:59 AM Today I made chili with a pint each of my eye of the goat beans, sweet potatoes, and stew meat. Also added one small red onion, tomato paste, whole tomatoes with juice, Mexican oregano, garlic powder, ground cumin, chili powder, and red pepper flakes. The chili was tasty and could not taste the sweet potatoes, but they did help to thicken the chili since I did not use any flour.

Posted - Feb 12 2025 : 3:55:15 PM Sara, that sounds so good for a puny feeling day and a cold dreary day like it is here. I made some chili with some salsa from 2022, and tomatoes from 2023 (I'm a rebel that way). The salsa added a nice level of spice and sweetness. I had enough left over to make a chili pie the following night. I added the leftover to a pie crust, added cheese jalapenos and folded the crust in, rustic style. |

Posted - Feb 12 2025 : 08:57:56 AM Not having a good day today so veg soup sounded good to me. Along with fresh veggies I added dried kale and a pint of my chili with beans. Years ago there was a buffet style restaurant that made "chuck wagon veg soup" and it was so good. To veg soup they added chili.

Posted - Feb 05 2025 : 03:45:08 AM It makes me smile when I am washing jars from almost every meal. It might be a jam or jelly, pickles, fruits or vegetables, the main meal or dessert. Made the hunters goulash last night, which uses three different canned jars.
