I have been inspired to start experimenting with making my own mocktails since recently attending a "Summer Mocktails" cooking class with my local library. We learned all about making our own simple syrups (sugar & water) and shrubs (fruit, vinegar & sugar), and then the foundations to building your mocktail. It's pretty simple once you get started. I have been testing my creations on my husband and, so far, the feedback has been positive!!

Here are a few of my latest creations:-

Pal-No-ma

1 cup coconut water
1/2 grapefruit juice
1/4 cup lime juice
2 tsp apple cider vinegar
2 tsp honey
dash of salt
ice
(Shake it all together, then top each glass with seltzer to taste. Salt the rim of each glass and garnish with a slice of lime)



Strawberry Balsamic Smash

Muddle 4 large strawberries, 4 cucumber slices, quartered, and 2 sprigs of thyme in the bottom of your jug.
Add 2 tsp honey, 2 tsp balsamic vinegar, & 2 tbsp lime juice. Muddle again.
Add 1 1/2 cups coconut water & ice. Shake. Strain mixture. Garnish with strawberries.

These are awesome I can’t wait to try them! I gave up alcohol 5 years ago after we figured out it was a major migraine trigger for me. I just got this book and have been experimenting with them. So far they’ve been delicious!

Well, it's that time of year again to dig out my Mocktail recipe book & try some new combinations. Here's my latest creation:-

Jasmine & Lychee Iced Tea

1 tbsp Jasmine tea leaves
4 cups just-boiled water
2 star anise, bashed lightly
14oz (400g) fresh lychees (or canned lychees in syrup), deseeded
honey, to taste
clear sparkling lemonade, to top up
lime wedges
fresh mint

Put the tea leaves in a warmed teapot or heatproof pitcher and pour in the just-boiled water. Leave to infuse for 5 minutes, then strain the tea into a clean pitcher. Add the star anise and let cool.
Half-fill 6 tall glasses with ice and add 3 lychees and a dash of honey if the fruit is fresh, or 2 tbsp of the syrup if canned, to each one. Add a few lime wedges and mint sprigs to the glasses and top up with lemonade to serve.

Here's my latest creation:-

Peach Moscow Mule

Dice 1/4 peach & mush in the bottom of a glass.
Add ice & Ginger Beer (I use Bundaberg Ginger Beer from Australia - you can buy it at Safeway & World Market).
Add a big squeeze of lime.
Top with mint.

Aperol-lee Spritz

Muddle 2 sprigs thyme, 4 sage leaves & 2 tsp lemon juice to emit the flavours of the herbs.
Then add:-
1 cup orange juice;
1/2 cup grapefruit juice;
1/2 cup pomegranate juice;
1/2 cup white grape juice;
1 tsp apple cider vinegar;

Top with seltzer to taste & garnish with a slice of orange.



A word on fruit juices - use 100% pure organic juice where you can (or homemade is even better). You don't want any sweetened juices or juices made from concentrate, otherwise it will really alter the flavour of the mocktail that you're trying to achieve.

Hi Nancy - to muddle is to mash the ingredients in the base of your jug. Some people purchase special muddling tools, but I just use the handle of a thick wooden spoon and I squish the ingredients together in the base of the jug. It usually involves fruit, so you're just squishing it enough to get some of the juices to come out and start mixing in with the other ingredients. You don't have to completely puree everything - it's just enough to start getting some of the flavours to emerge.

Nancy, hopefully Cindy can answer you, but I actually have a button on my blender that says muddle. I haven't used it so I am not exactly sure what it does, but I know there is a button lol!
