This, my farmsisters, (if you don't know already) is called 'huitlacoche (pronounced whee-tla-KOH-cheh), aka corn smut, aka fungas, aka Mexican truffle!!! Who would've known? I sure did not when hubs brought it in out of my garden! I thought I grew a freak and wondered if the garden had gotten too much rain? ( it has) So I posted this pic on my garden site and with over 60 hits plus, people were CONGRATULATING me for having produced such a delicacy! Lol, had I known before I tossed it with the other rotten veggies I would have taken to our local Mexican restaurant and surprised them!! How ' bout that??

Posted - Jul 28 2021 : 11:31:06 AM OH MY LUCKY YOU! I love corn smut! We learned about it when I was becoming a Master Gardener. Mix it with salt and garlic - YUM! I did not think it would be good, then they served it to us and it was delicious, especially on tortilla chips. I am curious though. Who was the FIRST person to look at it and go, “OH! That looks yummy. Let me try to EAT it!” LOL
