Posted - Aug 25 2019 : 09:08:59 AM I am looking for a great Ketchup Recipe. A few years ago I made ketchup and loved it. Unfortunately, I lost the recipe. I haven't found a good one since.
Any help with this would be greatly appreciated
Thanks
Theresa

Posted - Aug 29 2019 : 06:19:13 AM Found another ketchup recipe that's short enough for me to post here. It's out of 1935 "The Wilken Family Home Cooking Album" owners of the Wilken Family Blended Whiskey distillery. Love old cookbooks.
Old-Fashioned Tomato Catsup
12 ripe tomatoes 3 green peppers - chopped 3 lg onions - chopped 2 Tbsp salt 1/4 brown sugar 2 Tbsp cinnamon 1 Tbsp ginger 1 Tbsp mustard 4 cups vinegar
Scald the tomatoes and remove the skins. Put all the ingredients into a preserving kettle and cook them about seven hours, stirring them often. Strain the catsup and pour in into sterilized bottles and seal them.
Like most old recipes I find they take for granted how much women know and you have to read between the lines to know what to do. No canning info or shelf life given.

Posted - Aug 25 2019 : 09:35:54 AM Theresa I found two ketchup recipes that look interesting. One using fresh tomatoes - the other store can tomatoes. Both recipes are more than I want to type here so if you are interested PM me with your snail address and I will copy and mail to you.
One recipe had a hint for using the cloves. Instead of whole cloves make clove oil. Heat veg oil and add whole cloves. Steep for a few minutes and strain. The clove oil will have just a hint of cloves.
2 Tbsp veg oil 1 tsp whole cloves
