Posted - Feb 24 2019 : 08:53:24 AM I was digging in the chest freezer and found a package of oxtails that must have been in the last batch of beef we got. I made these before a long time ago and the result was less than stellar. I know they can be terrific, and would like to know how to make that happen. Suggestions anyone?? Thanks!!!!! |

Posted - Feb 24 2019 : 09:44:31 AM Oh wow thanks Sara!!!! I never saw that in the book! I've been going through little by little and haven't gotten that far. Have made the soup pistou and the roast chicken with crème fraiche and herbs. The best part are the photos. I just looked at Mimi's recipe and I think I will try that one. THanks again! |

Posted - Feb 24 2019 : 09:19:33 AM Lisa the only way I cook oxtails is in the slowcooker for beef broth. Annie gets the oxtails and she loves them.
Pg 262-263 in A Kitchen in France - a recipe for Oxtail-Macaroni Gratin. Who knew the French like oxtails.
English recipe in The Frugal Gourmet cookbook for Oxtail Stew with Bread for Sopping. (gotta love that title) It's more than I want to type so if you want the recipe I will copy it and send it tomorrow.
