Posted - Oct 30 2018 : 06:11:48 AM Anyone else love soup? I have been in a real soup mood lately. I have been making soups on the side or as a meal with a loaf of crusty bread. Soup/stew/chili recipes are one of my favorite things to make, especially this time of year. When I hostessed a "Soup Swap" for my farmgirl chapter, it was one of the best get-togethers! So, why not do a "soup swap" here? Post your favorite recipes!
One of my favorites is "Black Bean Soup""
2 Cans of black beans, drained and rinsed, with 3 TBSP of liquid reserved
1 cup diced onion
2 TBSP olive oil
1 diced sweet pepper
2 ribs celery diced
1 clove garlic, pressed through a garlic press
1 tsp chili powder 1/2 tsp salt 1/4 tsp cumin
2 cups chicken broth
Puree 1 of the can of beans with the reserved liquid. Brown onion in oil, then add remaining ingredients. Bring to a boil, then simmer 1/2 hour.
Top servings with a dollop of Greek yogurt and 1 peeled, chopped orange mixed with 1 Tbsp of fresh cilantro and 1/4 diced red onion.

Posted - Jan 01 2019 : 8:26:58 PM I made chicken noodle soup tonight with my express cooker. I used chicken, egg noodles, corn, onions, celery, carrots, garlic, salt and pepper, This was the first time I have made soup from scratch. It turned out pretty good but a little bland. I will need to spark it up a bit next time. Served it with Texas toast.

Posted - Jan 01 2019 : 3:46:38 PM I just made a wonderful Lightly Curried Butternut Squash Soup. I'm not fond of squash but I loved this soup and will be making it again soon. I got the recipe while living in Australia, where they call squash pumpkin, but I had not made it until a few days ago.
1 butternut squash 1 TBSP butter 1/2 medium onion, diced 3 cloves garlic, minced 1 1/2 tsp cumin powder 1 1/2 tsp turmeric powder 1 1/2 tsp coriander powder 1 can coconut milk 2-3 cups water salt and pepper
optional topping: cilantro
Peel the squash with a potato peeler. Cut the squash in half and scoop out the seeds. Slice off the bottom and stem. Slice into 1/2" (1cm) slices and cube. In a large pot, melt the butter and saute the garlic and onion for 2 minutes. Add the squash and spices, stir it up, and saute for 2 more minutes. Add coconut milk and water and stir. Bring to a boil then reduce heat and simmer 30 minutes or until the squash is soft. Use an immersion blender to blend until creamy or cool a bit before transferring in batches to a regular blender. Add salt and pepper as desired. Garnish with cilantro (coriander) leaves.

It has been cool here the past few days and the soup tasted so good. Now it will only get better as it sits in the fridge and gets used up[. Don't you love having left over soup to pull out?

Posted - Dec 23 2018 : 1:16:22 PM It finally feels winter here in Southern California, which means it is now soup season!
Split Pea and Barley Soup 2 cups split peas 6 cups water 2 cups vegetable broth 1/3 cup minced onion 1 clove garlic, minced 2 teaspoons lemon juice 1 teaspoon salt 1 teaspoon granulated sugar 1/4 teaspoon dried parsley 1/4 teaspoon white pepper 1 dash dried thyme 1/4 cup barley 2 medium carrots, diced 1 stalk celery, diced
Throw everything except the barley into a crockpot and let simmer a few hours. Sir occasionally, a hour prior to serving use immersion blender until a smooth consistency. 30 minutes prior to serving add barley and stir. Add some additional water if soup get's to thick. Enjoy!

It is so easy to vary the ingredients too. And I do love easy cooking. I am going to try your black bean soup when I get some black beans---I love them so I know it has to be good.

Posted - Nov 09 2018 : 05:54:21 AM Sara, LOVE the corncob broth how to! Can’t wait to try. I have been trying to lower some of the fat in things. I have lost eight pounds so far by just adding a bit more exercise, and switching out some of my dairy to low fat dairy or substituting dairy for almond milk.
Barbara, I will make your hamburger soup this weekend! Sounds so good.
Last night I made Old Worlde Cauliflower soup. It is on the side of the organic Cream of Buckwheat cereal box made by Pocono. It is so delicious. I use skim milk instead of the cream now and it is just as thick and good. I also make it easy and buy the organic frozen riced cauliflower from Costco.
Can’t wait to try the Hamburger soup!

Michele, a Tbsp or two of Worcestershire sauce or apple cider vinegar will perk up soup.

Posted - Nov 07 2018 : 09:20:10 AM Soup is too easy. I like a lot of garlic in mine and Worcestershire sauce. Here is my favorite soup---can be crock potted or just cooked on the range. It's Vegetable Hamburger Soup. Brown one pound of ground beef in a skillet. Put in pot and Add one half cup of chopped onion and two cups of canned tomatoes. Dice two cups of carrots and cube two cups of potatoes. Add one half cup of diced celery and one fourth cup of rice. Add one cup of beef broth and salt and pepper to taste and whatever else suits your fancy. So simple easy and GOOD! Needs to cook about an hour simmering on the range. I usually add more tomatoes and broth and put a can of corn and kidney beans in.

Potato Soup w/ Corncob Broth
Corncob Broth 6-8 corncobs 1 yellow onion - quartered 1 Chopped stalk celery Salt & black pepper to taste Red Pepper flakes - optional 1 Smashed clove of garlic Water to cover by two inches.
Put all ingredients in slow cooker. Cook on low overnight or 8 hours. Strain through cheesecloth or Viva paper towels.
Use your favorite potato soup recipe and substitute one pint of corncob broth for part of the water or milk.
Corncob broth cans easily using the vegetable broth recipe in Ball Blue Book.
